If I’m being totally honest, frosting/icing has to be the one thing that I dread making. I don’t know what it is about frosting that seems to trouble me so…
I don’t know if it’s because I’m trying to make a tiered cake and I run out of icing. I don’t know if it’s that I don’t let my butter softened enough, or the opposite, I let my butter soften too much. I don’t know if it’s that my icing is too sweet or not sweet enough.
I can’t tell you the exact reason, or maybe its a bunch of reasons all whipped up into one disappointing icing.
I’ve made a couple of icing recipes before, but I can tell you that it took me a couple tries before they were good enough to post!
Until I found this amazing frosting! I think one of the reasons I appreciate this frosting so much is because of how many times I’ve messed up frosting before. It is so easy to whip up, there’s really no way to mess it up! This frosting is so delicious and fluffy, and easy, and amazing. I seriously love it so much!
One crucial key I’ve learned from my research is that the butter needs to be room temperature! This is so important because the butter is softer and mixes together easier! The cream cheese also needs to be at room temperature so the butter and the cream cheese whip together to form a perfect little cloud of happiness. I will typically put the butter out the night before and then put the cream cheese out the morning of. I don’t want the cream cheese to get too warm and I feel like the butter takes longer to soften than the cream cheese.
If you’re like me and struggle finding that perfect, fluffy icing recipe, then look no farther! This icing whips together so easily and is one of the best icings I’ve ever made or had! It’s so creamy with a slight tang from the cream cheese, but with that smooth texture from the butter! Oh my, this is what my dreams are made of!
1 block of cream cheese
1 stick of butter
3 1/2 cups of powdered sugar
1 tablespoon of heavy cream
2 teaspoons of vanilla
A sprinkle of salt
Cream the butter and cream cheese together in the bowl of a stand mixer. Slowly, add in the powdered sugar. Once all the powdered sugar has been incorporated, add in the heavy cream, vanilla, and salt. Whip until light and fluffy!
Decorate or spread onto your cakes however you like!
I love that this icing is sweet, but not too sweet, smooth, creamy, and has that little bit of tang from the cream cheese! I absolutely love this icing! This is definitely going to be my go-to icing from here on out!
