Homemade Zuppa Toscana

Ah, soup, the unofficial official mascot of fall weather. Nothing screams cozy, cuddly weather than a bowl of steaming soup. Be prepared for the soup recipes to come in full force.

Soup has to be one of my favorite things to make! I love watching soup come together! As you make it, it seems a little odd and you might think to yourself, “Is this really going come together?” Then at the last second, you add the broth, a little cream, and the soup is born.

Typically, soups will start with a base of something called a mirepoix, which is onions, carrots, and celery! Depending on where you go this mirepoix changes! For example, in the south, particularly the Louisiana region, they have something called the Holy Trinity, which is onion, carrots, and bell pepper. You’ll find that different cultures also have their own variety, for example, some Asian cultures might use ginger in the beginning, and some Italian soups might start with adding garlic as well. The only concept of the mirepoix is to insert as much flavor into the broth as possible, this is the starting foundation for the layers of flavor!

Isn’t that so exciting? Soup stuff just really makes me happy.

This one starts off with olive oil, garlic, and onions. This might lead you to the idea of a more Italian style of mirepoix, even the name includes Tuscany, located in Italy. I did some research on a traditional style Tuscan soup and, unfortunately, this version that I’m making today has been very Americanized. Despite the origins or qualifications of this soup, it’s still very delicious and still looks super impressive when you make it! And that’s really what matters at the end of the day!

This is really a great soup to start with because it’s creamy, meaty, filling, and has some greens in it to make it healthy! I love all the different textures in this soup and how wonderful they all go together! Trust me, this will be your new fall favorite. Step aside, Pumpkin Spice, Zuppa Toscana is here to stay!

Ingredients:

2 tablespoons of olive oil

1 medium onion

2 cloves of garlic

1 1/2 pounds of sausage, I use a mixture of hot and mild

1/2 teaspoon of Italian seasoning

1/2 teaspoon of red pepper flakes

1/4 cup of flour

2 cartons of chicken broth

5 russet potatoes

1/2 cup of heavy cream

1 bunch of kale

Salt and pepper, to taste

Begin by adding olive oil to the bottom of a dutch oven, or a large soup pot, and add in the chopped onions. Allow the onions to cook for about two to three minutes, before adding in the garlic. Once the onions are softened, I like to place them on a plate while I cook the sausage, this helps when I drain the grease from sausage, I don’t lose any onions in the process! Add in the sausage and begin to brown. Once the sausage is fully cooked, drain off all the grease. Add the onions and garlic back into the pot, then add the Italian seasoning, red pepper flakes, salt, pepper, and 1/4 cup of flour. Stir the flour into the ingredients and all them to cook together for about a minute or two, to cook out the flour flavor. Then, while slowly stirring, add in the two cartons of chicken broth gently. Stir the entire time you’re adding the chicken broth. Once the broth has been added, turn the high to medium-high and bring the liquid to boil.

Once there’s a low boil, add in the potatoes. I like to cut the potatoes into quarters and then cut them into little 1/2 inch slices. The thinner the potatoes are, the quicker they’ll cook! I also like to keep them smaller so they fit easier on a spoon! Cover the pot slightly, reduce the heat to medium-low, and cook for about 15-20 minutes, or until the potatoes are fully cooked. When the potatoes are fully cooked, add in the kale. Cover and cook for another minute, until the kale softens. Finally, add in the heavy cream.

I like to serve this soup with a little sprinkle of parmesan over the top, with a good sprinkle of freshly cracked black pepper!

Start with onions and olive oil! Off to a good start already!
Saute for a few minutes before adding garlic.
Add sausage!
Add the onions back in with all the delicious spices!
Add broth and potatoes!
Then finally kale and heavy cream!
I can almost taste this soup! It’s so delicious, creamy, and absolutely wonderful!

This soup is so delicious and hearty, it is the perfect dish for fall! I love the meaty sausage with the creamy potatoes and the tangy bite from the kale! The creamy broth just warms your whole body and soul! This soup is definitely going to be on repeat in my household!
