I think my theme of cookies for 2020 is a no-bake cookie. I mean, 2020 has been a tough year, we don’t need to add bad cookie dough to the mix right?! (Not that bad cookie dough even exists, but you get the point!) I love something simple to throw together and you have a super delicious cookie, in a fraction of the time! Plus, a lot of these cookies can be thrown together with pantry staples and that’s always a win in my book.
The idea for these cookies came from a recipe I made with my mom when I younger and it was super simple but so delicious! I believe that recipe also called for butter crackers that you dipped in chocolate completely and then sprinkled crushed candy cane over the top. Couldn’t be easier, right?! But they were so delicious and I loved the combination of sweet and salty. You really can’t go wrong with a sweet and salty combination. Hello, fried chicken and waffles!
I decided to add caramel in between because I wanted to give these cookies a little depth of flavor and added texture! Caramel is actually one of those flavors that I kind of forget about. I don’t know why, but I always seem to skip right by it. But when I do have it, I immediately remember how much I adore caramel. I love the buttery, chewy notes of caramel with the rich color and beautiful flavors throughout. Plus, I had a feeling that caramel and a salty buttery cracker would be best friends. Turns out, I was right in the best possible way!
This is a great activity to do with your family! I made this recipe with my mom and it was so much fun! She laid out all the crackers for me while I added the caramel. Everything came together so fast, plus it was a fun memory we got to create together!
Recipe note: if you like a chewier caramel, only add about 2 tablespoons of heavy cream. If you like caramel more smooth and creamy, add the whole 4 tablespoons.
Two packs of butter crackers
1 bag of pre-wrapped caramels
Two-Four tablespoons of heavy cream
2 cups of chocolate chips
Flakey salt, for garnish
Lay out about half of the butter crackers on a cookie rack.
Unwrap all of the caramels and place them in a small saucepan. Begin to heat on medium until the caramels start to melt. Then add in the heavy cream.
Once all the caramel has melted and the heavy cream has been incorporated, remove from heat. Working quickly, while the caramel is still warm, place a teaspoon of caramel onto each butter cracker. Then place another cracker on top, and press down gently. You don’t want to press too hard or the caramel will come out of the sides.
Once all of the crackers have been sandwiched together, allow to cool and melt the chocolate. Melt the chocolate by placing the chocolate chips in a microwave-safe bowl and melt in 30-second intervals, until fully melted.
Then take one cracker sandwich and dip halfway into the chocolate. Gently tap the cracker on the side of the bowl to allow the extra chocolate to fall off. Then, place on a wire rack for the chocolate to harden. I like to take a pinch of flakey salt to garnish on the top, but you don’t have to!
Isn’t that so easy?! The easiest little cookie to make, but I promise you they are LOADED with flavor! They have a nice crunch from the cracker with the creamy caramel and, of course, chocolate makes everything better!
