My sister is known for many things: kind, gentle, sweet, and most importantly, her peanut butter cookies. If you think you’ve had a good peanut butter cookie, you have no idea.
My sister makes the best peanut butter cookie. I don’t know entirely what she does, maybe it’s the crunchy peanut butter, maybe it’s her ratio of peanut butter to butter, or maybe it’s all of those things and then some! Whatever it is, it’s working for her!
I’m hoping that one day soon I will get top-secret access to this recipe and be able to share it with you, but for now, I have this almond butter spin on cookies in her honor.
I love peanut butter, always have and always will, but recently my eyes have been opened to the delicious world of almond butter. More specifically vanilla almond butter. Creamy, nutty, with hints of vanilla throughout. Ah, pure heavenly bliss.
If peanut butter is more your jam, then feel free to swap in peanut butter or any other nut butter of your choosing! I would just omit the almond extract and add in more vanilla extract!
3/4 cup of vanilla almond butter
1 stick of butter, room temperature
1/2 cup of sugar
1/2 cup of brown sugar
1 teaspoon of vanilla
1-2 drops of almond extract
1 cup of flour, plus 6 tablespoons
3/4 teaspoon of baking soda
1/2 teaspoon of baking powder
Chocolate, for garnish
Sliced almonds, for garnish
Preheat oven to 350-degrees
In the bowl of a stand mixer, mix the almond butter, butter, sugar, and brown sugar together. Beat the ingredients together until completely mixed making the mixture light and fluffy!
Add in the egg and extracts. Mix until the egg is fully incorporated.
In a separate bowl, combine flour, baking soda, and baking powder. Whisk ingredients together.
Pour half the flour mixture into the wet ingredients and mix together. Once that is mostly incorporated, add in the second half.
When everything is fully mixed together, line a baking sheet with parchment paper. Using a cookie scoop, scoop some cookie dough in your hands. Roll into a bowl and then place on the parchment paper. Using your fingers or the back of a glass, gently press the cookie dough flat on the top. Leave about two inches of space between the cookies!
Bake in the oven for about 10 minutes. The cookies will flatten out and be a deep brown color!
Let cool on a cooling rack for about 10-15 minutes, if you can wait that long!
Drizzle with melted chocolate and top with almond slices or enjoy as is!
