Crockpot Irish Beef Stew

For a fun spin on St. Patrick’s Day dinner, I decided to make Irish Beef Stew! The difference between this beef stew and the one I grew up on is the addition of tomato paste instead of canned tomatoes and the addition of a stout beer!

Don’t worry about giving beer to the young kiddos in the house, all the alcohol cooks out! If you can’t find an Irish stout, I would suggest adding about two tablespoons of coffee to water and using that to replace the beer. It won’t give you the same exact flavor but it will have those rich notes of coffee.

The best part of this is the gravy that’s created by adding the slurry, a mixture of cornstarch and liquid, at the very end! It’s perfect for dunking a piece of crust bread (hopefully an Irish soda bread) and soaking up all that delicious flavor!

Recipe notes: If you notice that the liquid is looking a little low, you can add in a little bit of water to get the broth to cover the meat!

Ingredients:

1 tablespoon of olive oil

1 pound of stew beef

1 yellow onion

2 stalks of celery

4 large carrots

5 yellow potatoes

3 tablespoons of tomato paste

2 cups of any dry stout beer

2 cups of beef broth

2 tablespoons of fresh thyme

1 teaspoon of garlic powder

2 teaspoons of salt

Fresh black pepper, to taste

1 bag of frozen peas

1 teaspoon of cornstarch

In a large skillet, add olive oil and begin to brown the meat. You mainly want each of the edges to get a nice brown color of them, not to cook them all the way through.

While the meat is browning, chop the vegetables into large chunks.

Add the meat and vegetables into the crockpot.

Add in tomato paste, beer, broth, thyme, garlic powder, salt, and pepper into the crockpot.

Cover and cook on low for 8 hours or high for 6.

In the last 30 minutes, take out 1 cup of the liquid. Add cornstarch to the stew liquid and whisk together. Then pour back into the stew and stir to combine.

Right before you serve up the stew, add in the peas.

You can serve this on rice, noodles, or, my personal favorite, mashed potatoes.

I love how hearty and warm this stew is! While you don’t taste the coffee beer in the stew, it adds a depth of flavor that you don’t get from other stews! My favorite bite is when I get a piece of stewed potato mixed in with the mashed potatoes on the bottom… Simply bliss!
