Mint Chocolate Whoopie Pies

Mint chocolate chip is my favorite ice cream flavor! Well, really it’s my favorite flavor combination out there!

So when I was thinking of what flavor to make these whoopie pies, it was really a no-brainer!

If you’ve never had a whoopie pie, it’s pretty much a cake sandwich. What’s not to like about that!?!

Recipe notes:

If you want to make these ahead of time, I suggest making the whoopie pie part first and storing them single-file in an airtight container. Then, you can make the frosting the day you need them! If you try to stack them, they might stick together, so when you are storing them, keep them flat!

If you are storing them in the fridge before you eat them, give them some time to set at room temperature before you eat them! This gives the cakes time to soften up before you eat them.

Ingredients:

1 3/4 cup of flour

3/4 cup of unsweetened cocoa powder

1/2 teaspoon of baking soda

1 teaspoon of baking powder

A sprinkle of salt

1/2 cup of sugar

1/2 cup of lightly packed brown sugar

1/2 cup of butter, softened

2 large eggs

1/4 cup of milk, plus one tablespoon

1 teaspoon of vanilla extract

Mint frosting:

2 sticks of butter, room temperature

1 teaspoon of mint extract

2 cups of powdered sugar

A pinch of salt

2-3 tablespoons of milk

Preheat the oven to 350 degrees.

In a large bowl,mix together flour, cocoa powder, baking soda, baking powder, and salt. Whisk together and set aside.

In the bowl of a stand mixer, cream together butter, sugar, and brown sugar.

Add in one egg at a time, waiting until each egg has been fully incorporated.

After the eggs have been added in, add 1/3 of the dry ingredients to the butter mixture. Followed by half of the milk mixture. Continue to alternate until all the dry ingredients have been added in.

Using a small cookie scoop, place dollops of the batter onto a parchment paper-lined baking sheet about two inches apart.

Bake in the oven for about 10-12 minutes, or until a toothpick inserted comes out clean.

While the whoopie pies cool, time to make the frosting!

Whip butter in a stand mixer on medium-high speed until light and fluffy. Gradually add in powdered sugar.

Once all the powdered sugar has been added, pour in milk, a pinch of salt, and mint extract.

Whip everything together.

Place frosting into a piping bag and snip off about an inch from the bottom, so the piping hole is fairly large.

Take one whoopie pit and hold it so the flat side is facing up. Pipe a large dollop of frosting into the middle. Take another whoopie pie and gently press down so the frosting just barely goes to the edge of the sandwich.

Best served at room temperature!

These are such a fun dessert to make! I love how soft and spongy the cakes are with the creamy, minty buttercream in the middle. It’s everything you would want in a mint chocolate dessert!
