No-Bake Pumpkin Pie

Who doesn’t love pumpkin pie, right!?

November is definitely the month of pies! Apple pie, pumpkin pie, sweet potato pie, cherry pie, chocolate pie, I mean there’s a pie for everyone!

But it wouldn’t be Thanksgiving without pumpkin pie, am I right!?

That’s why this No-Bake Pumpkin Pie is so perfect! There’s enough going on around Thanksgiving with the turkey, the sides, even more sides, and of course, the gravy. Getting ahead by making the dessert the day before is the perfect way to ensure a fuss-free Thanksgiving day!

Recipes notes: I only added about 1/2 cup of powdered sugar into the pie filling because I don’t like a pumpkin pie that is too sweet. That’s what the whipped cream on top is for! But if you like your pies a little bit sweeter, add about 1/4 cup more of powdered sugar!

Ingredients:

1 pint of heavy whipping cream

1 block of room temperature cream cheese

2/3 cup of pumpkin

1 teaspoon of pumpkin pie spice

1/2 cup of powdered sugar

1 teaspoon of vanilla

Crust:

1 and 1/2 cups of graham crackers (about 14 full crackers)

1/4 cup of brown sugar

6 tablespoons of melted butter

A pinch of salt

Whipped cream, for garnish

Caramel drizzle, for garnish

To begin, melt the butter on the stove.

While the butter is melting, add graham crackers to a food processor and pulse until you have fine crumbs.

In a bowl, combine graham cracker crumbs, brown sugar, butter, and a pinch of salt. Stir until the mixture resembles wet sand.

Press into a 9-inch springform pan, making sure all the bottom is covered and slightly up the sides!

Place the crust in the freezer while you make the filling.

To make the filling, whip up heavy cream until it’s just beginning to hold its shape.

Add in pumpkin and room temperature cream cheese. Mix until they’re almost fully mixed in, about a minute.

Then add in powdered sugar, vanilla, and pumpkin pie spice.

Once everything is fully mixed together, pour into the pie crust.

Smooth over the top and place in the fridge overnight or for at least 6 hours.

Serve with a dollop of whipped cream and a caramel drizzle!
