Browned Butter Cinnamon Crunch Cookies


Browned Butter Cinnamon Crunch Cookies are the cinnamon cookie of your dreams! A soft, chewy cookie filled with cinnamon and the delicious nutty flavor of browned butter, only made better with a brown sugar crumble on top! When I say I couldn’t stop eating these, that is complete truth!!!

Browned Butter Cinnamon Crunch Cookies

say that every cookie is my new favorite cookie, but I *really* mean it this time. You know a cookie is going to be good if you can’t stop eating the cookie dough. 

Let’s start by breaking down the layers of deliciousness in this cookie. 

First, we have this delicious dough made with browned butter that creates a warm, nutty, richness in the cookie that you can only find with browned butter. Pair that with cinnamon and you have a knock out cookie dough. I add crushed up cinnamon cereal that adds the perfect level of crunch to these cookies. 

As if that’s not enough, there’s a brown sugar, cinnamon crumble on top that really just sends these cookies to the next level! The brown sugar with the cinnamon is heavenly all on it’s own, but on top of a cookie is just next level!!

What is Browned Butter?

Browned butter is an amazing ingredient. If you haven’t gotten the chance to use browned butter, then this is the perfect chance to use!

Browned butter is the act of caramelizing the milk solids of the butter. So as the butter melts the milk solids begin to caramelize and turn this beautiful rich golden brown color. 

It takes about 10-15 minutes to get the perfect golden brown color. Start by melting the butter in a shallow pan (this helps the butter brown quicker!). About every minute or so, I’ll pick up the saucepan and give it a swirl, then put it back down. The butter will begin to bubble, then foam at the top. When the butter begins to foam, start whisking constantly. The butter will brown very quick in about 2 minutes. When the butter is a delicious golden color, remove from heat, and pour into a separate bowl to cool. Make sure to scrap off all the delicious browned bits on the bottom of the pan! 

This process seems like a lot, but honestly, most of it happens in the last few minutes! 

Browned butter takes a nuttier, richer flavor that enhances any baked goods you add it to! It adds such a depth of flavor that makes these cookies absolutely addicting! 

Chilling the dough

Do I really need to chill the dough? I know, I know. Smelling the delicious cookie dough, and let’s be honest here, sneaking a bite or two, makes it almost impossible to chill the dough, knowing that it will be even longer until you can eat the cookies. 

Most of the time, I would say it’s not really important to chill the dough, but these Browned Butter Cinnamon Crunch Cookies use browned butter as the fat (obviously), and we need the butter to firm up slightly.

Because we’re using melted butter in the recipe, it could cause the cookies to spread out too much in the oven. Using room temperature butter lets the cookies spread to perfection, but having already melted butter could cause them to spread a bit too much. So we want to chill the dough for at least 10 minutes in the freezer for the butter to firm up slightly! Especially since this was browned butter that was cooking for about 15 minutes, we want the butter to firm up before baking.

Topping a cookie with a crumble topping is probably the best thing I have ever done. It just takes a delicious cookie and makes it even more delicious! The cinnamon and browned butter is such an amazing combination with the nutty, warm flavors!

Browned Butter Cinnamon Crunch Cookies

  • 9 tablespoons Butter
  • 1/4 cup Sugar
  • 3/4 cup Brown Sugar packed
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 Egg
  • 1 tablespoon Vanilla
  • 1 3/4 cups Flour
  • 2 teaspoons Cinnamon
  • 1/2 cup Cinnamon Cereal crushed

Crumble topping:

  • 4 tablespoons Butter melted
  • 1/2 cup Brown Sugar
  • 3/4 cup Flour
  • 1/2 teaspoon Cinnamon
  • 1/4 cup Cinnamon Cereal crushed


  • Preheat oven to 375 degrees.
  • Start by browning the butter. Put the butter into a small saucepan on the stove.
  • Over medium heat, let the butter begin to melt, stirring occasionally for about 7-8 minutes.
  • Once the butter begins to foam on the top, stir constantly under the butter is a golden brown color about 2 minutes. Pour into another dish and let cool for about 10 minutes.
  • Then in a large bowl, combine browned butter, white sugar, brown sugar, and vanilla. Stir together.
  • Whisk in egg.
  • Next, add in flour, baking soda, baking powder, cinnamon. Once the mixture is almost fully together, add in the crushed cinnamon cereal.
  • Put the dough in the freezer to chill while making the crumble.

Making the Crumble:

  • Melt the butter in a microwave-safe plate for 30 seconds until fully melted.
  • Pour melted butter over brown sugar, flour, and cinnamon.
  • Then stir in the crushed cereal.
  • Scoop out a dollop of cookie dough and place on a cookie sheet. Make a small indent in the dough, then add in a heaping tablespooon of crumble.
  • Bake for about 10-12 minutes.
  • Remove from oven and let cool slightly!
  • Serve with a glass of milk and enjoy!
