What is a Single-Serve Recipe

A single serve recipe is pretty much exactly what it sounds like! A recipe that makes enough for one serving!

This particular recipe makes 2 cookies, so you could *technically* share. But who only eats one cookie!? Not me, that’s for sure.

This recipe is super easy to double though, so if you do have a friend over and want a super special movie snack, this would be the perfect recipe to whip out and make!

Double Chocolate = Double Deliciousness

This recipe has chocolate two ways: chocolate chips and cocoa powder. The cocoa powder is how you get the base of the cookie to have the perfect chocolate flavor. I like to use unsweetened cocoa powder when I’m baking so I can be in control of the sweetness of the cookie. I prefer to use a Dutch processed cocoa powder, which I think has the best chocolate flavor.

As for the chocolate chip element, you can use whatever chocolate chip you like: semi-sweet, dark chocolate, or milk chocolate. Even throwing in a few white chocolate chips would be equally as delicious! For this recipe, I used semi-sweet to help balance out the sweetness.

If you like nuts in your dessert, add those in too! You could even do like a rocky road version with marshmallows too! That’s a classic flavor combination! I have a Rocky Road Marshmallow Treat you could try if you like it!

Two Cookies, One Perfect Recipe

Despite this being a single serve recipe, there are actually two ways to make this dessert.

You can scoop out the cookie dough using a medium cookie scoop and create two perfectly sized cookies.

Or you can make one gigantic cookie instead. This does cause the cook time to go up to about 16-18 minutes, but it’s definitely worth the wait!

I love how gigantic this cookie is! It makes me laugh everytime I bake it!

2 medium cookies or 1 large mega cookie… I’ll let you decide which you bake!

It’s basically just like a regular cookie recipe, except mini. Which is *way* cuter. Who doesn’t love mini things right!?

I love these single serve recipes, but especially this Single-Serve Double Chocolate Cookie recipe! It tastes almost like a brownie and a cookie had one super delicious baby and you don’t even have to share!

Single-Serve Double Chocolate Cookie

Ingredients

  • 2 tablespoons Butter room temperature
  • 3 tablespoons Brown Sugar
  • 1/4 teaspoon Vanilla Extract
  • 1 Egg Yolk
  • 3 1/2 tablespoons Flour
  • 2 tablespoons Cocoa Powder
  • 1/8 teaspoon Baking Soda
  • 1/4 cup Chocolate Chips

Instructions

  • Preheat oven to 350 degrees.
  • Add butter, brown sugar, and vanilla extract to a bowl and mix together.
  • Add in egg yolk and mix until everything is combined.
  • Stir in flour, cocoa powder, and baking soda.
  • Mix in chocolate chips
  • Scoop onto a baking sheet and bake for about 10-12 minutes.
  • Let cool slightly and enjoy!
