Preheat oven to 400 degrees.
Chop up apples into small 1/2 inch cubes, add to a large bowl.

To the apples, add sugar, brown sugar, vanilla, and cinnamon.
1/3 cup Brown Sugar, 3 tablespoons Sugar, 1 teaspoon Vanilla, 2 teaspoons Cinnamon
Mix together, then add in the flour.

Cut the thawed puff pastry into 4 squares.
1 package Puff Pastry
Take one square of puff pastry. Spoon about 2-3 tablespoons of apples onto the top triangle of the puff pastry.
Crack an egg with a splash of water and mix together.
1 Egg
Gently brush the egg wash around the edges of the puff pastry square. Fold the puff pastry over the apple mixture so the corners meet, creating a triangle.
Use a fork to gently crimp the edges together.
Brush the egg wash over the top of the puff pastry and sprinkle with the extra sugar.
3 tablespoons Sugar
Repeat with the rest of the puff pastry squares.
Bake in a preheated oven for 20-25 minutes. The puff pastry should puff up and be golden brown.
While the puff pastry cools, make the glaze.
Combine powdered sugar, vanilla, and milk.
1 cup Powdered Sugar, 1 teaspoon Vanilla, 2-3 tablespoons Milk
Drizzle the glaze over the puff pastry.
