Easy Dill Pickle Tuna Salad Recipe with Chickpeas

With just a few easy steps and some simple ingredients you can have a delicious (and healthy) meal that’s perfect for lunch today or meal prep for the rest of the week!

Equipment

  • Potato Masher

Ingredients

  • 1 can Chickpeas drained
  • 1 can Tuna drained
  • 1 Scallion chopped
  • 1/2 tablespoon Mayo
  • 2 tablespoons Greek Yogurt
  • 1 teaspoon Dijon Mustard
  • 2 tablespoons Dill Pickle Relish
  • Salt and Pepper to taste

Instructions

  • In a bowl, add in drained chickpeas. Use a potato masher to mash about 3/4 of the chickpeas.
    1 can Chickpeas
  • Then add in drained tuna.
    1 can Tuna
  • Add in chopped scallion, mayo, greek yogurt, dijon mustard, and dill pickle relish.
    1 Scallion, 1/2 tablespoon Mayo, 2 tablespoons Greek Yogurt, 1 teaspoon Dijon Mustard, 2 tablespoons Dill Pickle Relish
  • Stir everything together! Then season with salt and pepper!
    Salt and Pepper
  • Serve with lettuce or a toasted piece of bread!
