These Peanut Butter Banana Cookies are what chunky-monkey-ice-cream dreams are made of! A perfect combination of creamy peanut butter, sweet banana, and dark chocolate swirls throughout. You won’t be able to have just one!

What is Chunky Monkey!?

Chunky Monkey is a popular ice cream flavor that’s made of peanut butter, banana, and chocolate. It might sound like a crazy combination at first, but once you try it, you’ll understand. I mean, has anyone had peanut butter and banana sandwiches!? It’s different, but it totally works!

For these cookies, I replaced the egg with banana which makes these cookies extra soft and delicious. The texture of these cookies is so soft and chewy!

To get those perfect swirls and chunks of chocolate, I like to chop up a chocolate bar instead of using chips! By chopping up the chocolate, you get small little shards that just melt right into the cookie, while some bigger chunks still get the cookie perfect texture!

Peanut Butter and Chocolate Cookies

Peanut butter and chocolate is such a classic combination, but adding the banana just really takes it to the next level. If you aren’t a big fan of banana, you can replace it with one egg instead.

I know that banana isn’t for everyone, so you can leave it out of this recipe! Peanut butter and chocolate cookies are still a winning combo!

If you do add the banana, make sure its a perfectly ripe banana that’s sweet and easy to mash up! If your bananas aren’t quite there yet, you can preheat the oven to 300 degrees, then place the bananas (with the peels still on) on a baking sheet and bake for about 15-20 minutes. The skins will turn black but the banana will be perfectly sweet on the inside!

Ingredients

  • 1 3/4 cups Flour
  • 1 teaspoon Baking Powder
  • Pinch Salt
  • 1 stick Butter room temperature
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar packed
  • 1/2 cup Peanut Butter
  • 1 Banana
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Dark Chocolate Bar

Instructions

  • Preheat the oven to 350 degrees.
  • Cream together butter and peanut butter.
    1 stick Butter room temperature, 1/2 cup Peanut Butter
  • Then, add in brown sugar and sugar.
    1/2 cup Sugar, 1/2 cup Brown Sugar packed
  • After the sugar has been fully incorporated, add in a mashed banana and vanilla extract.
    1 Banana, 1 teaspoon Vanilla Extract
  • Then add in flour, baking powder, and salt.
    1 3/4 cups Flour, 1 teaspoon Baking Powder, Pinch Salt
  • Once the mixture is almost mixed together, chop up chocolate and add to cookie dough.
    1/2 cup Dark Chocolate Bar
  • Using a medium cookie scoop, scoop out the dough onto a parchment lined baking sheet.
  • Bake for about 15 minutes when the edges are golden brown.
  • Let cool and enjoy!
