Chewy Gingerbread Cookies

These Chewy Gingerbread Cookies are going to be your new favorite Christmas cookie! They are thick and chewy, with the perfect amount of ginger flavor!

Ingredients
  

  • 3 cups Flour 1/4 cup set aside
  • 2 tablespoons Cornstarch
  • 8 tablespoons Shortening
  • 1/3 cup Molasses
  • 1 egg plus 1 egg yolk
  • 2/3 cup Brown Sugar
  • 1 1/2 teaspoon Ginger
  • 1 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Clove
  • 1/4 teaspoon Nutmeg
  • 1/8 teaspoon Salt
  • 1 teaspoon Vanilla

Cinnamon Vanilla Glaze:

  • 2 tablespoons Butter
  • 2 tablespoons Heavy Cream
  • 1 1/2 cups Powdered Sugar
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Vanilla

Instructions
 

  • In a large bowl, combine shortening, brown sugar, and molasses. Use a mixer on medium speed to mix until combined.
    8 tablespoons Shortening, 1/3 cup Molasses, 2/3 cup Brown Sugar
  • Then add in 1 egg plus 1 egg yolk and the vanilla. Mix together.

  • Then add in flour, cornstarch, ginger, cinnamon, clove, nutmeg, and salt.
    3 cups Flour, 2 tablespoons Cornstarch, 1 1/2 teaspoon Ginger, 1 1/2 teaspoon Cinnamon, 1/4 teaspoon Clove, 1/4 teaspoon Nutmeg, 1/8 teaspoon Salt
  • Mix everything together until a soft dough forms. If the dough is still too sticky, you can add more flour a tablespoon at a time.
  • Wrap in plastic wrap and place in the fridge to chill for an hour.
  • Preheat oven to 375 degrees.
  • Spread a little extra flour* on a board and begin to roll out dough to about half an inch in thickness. Use a cookie cutter to cut out your gingerbread people.
  • Place the gingerbread people on a parchment lined baking sheet and bake for 10 minutes**.
  • While the cookies bake, assemble the glaze.

Cinnamon Vanilla Glaze:

  • Melt butter in a microwave safe bowl for about 30 seconds until melted.
    2 tablespoons Butter
  • Add in powdered sugar, cinnamon, vanilla, and heavy cream.
    2 tablespoons Heavy Cream, 1 1/2 cups Powdered Sugar, 1/2 teaspoon Cinnamon, 1 teaspoon Vanilla
  • Whisk everything together until smooth.
  • When the cookies come out of the oven, let them cool for about a minute before adding the glaze to the top!
  • Let the glaze harden before serving! Enjoy!

Notes

*I spread a little extra flour on the my board and on top of the gingerbread dough before I start to roll out the dough. The dough will still be soft, and might be a little sticky. If you feel like it's too sticky and hard to roll out, add more flour a tablespoon at a time!
**Baking time will change depending on the size of your gingerbread people. My cookie cutters were 3.5 inches, if the ones you are using are smaller, the cook time will be less by a few minutes. You want the edges to be set but the insides to still be soft.
