To begin, prep the ingredients by washing and drying produce. Dice onion and carrots, set aside.
In a large pot, add a drizzle of olive oil, then add in onions and carrots.

After the vegetables cook for about 5 minutes, grate in ginger and garlic. Add in turmeric. Let cook for 2-3 minutes.

Pour in rice and let the rice toast for 1 minute, before adding in the chicken broth and soy sauce.
6 cups Chicken Broth, 1 cup Jasmine Rice, 2 teaspoons Soy Sauce
Cover and let the rice cook for about 15 minutes or until soft.
When the rice is done, squeeze in the juice of two limes. Add in salt and pepper to taste.

I like to garnish this soup with cilantro, scallions, chopped peanuts and an extra squeeze of lime!
