Everything you love about almond croissants wrapped into one delicious Almond Croissant Cookie! No need to worry about making homemade croissants in this recipe!

Equipment

  • 2 ounce Cookie Scoop
  • Baking Sheet
  • Parchment Paper

Ingredients
  

  • 1 stick Butter
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Almond Extract
  • 1 1/4 cup Flour
  • 1/2 cup Almond Flour
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Cornstarch
  • Sliced Almonds
  • Powdered Sugar for garnish

Instructions
 

  • In a large bowl, mix together butter, sugar, and brown sugar until light and fluffy.
    1 stick Butter, 1/2 cup Sugar, 1/2 cup Brown Sugar
  • Add in egg, vanilla extract, and almond extract.
    1 Egg, 1 teaspoon Vanilla Extract, 1/2 teaspoon Almond Extract
  • Then add in flour, almond flour, cornstarch and baking powder.
    1 1/4 cup Flour, 1/2 cup Almond Flour, 1/4 teaspoon Baking Powder, 1/4 teaspoon Cornstarch
  • Scoop out cookie dough and roll in sliced almonds.

  • Let the dough chill for about 30 minutes
  • Bake in a 350 degree preheated oven for about 10-13 minutes. You want the middle to still be soft.
  • Sprinkle with a dusting of powdered sugar and enjoy!

Notes

*If your cookies spread too much while baking, you can use a round cookie cutter to place around the cookie and swirl it back into a round cookie shape!
