Peppermint Bark Cookies

Soft chocolate cookies loaded up with white chocolate peppermint bark and chocolate chips for extra deliciousness!

Ingredients
  

  • 1 3/4 cup Flour
  • 3/4 cup Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • A Sprinkle of Salt
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar packed
  • 1/2 cup Butter softened
  • 2 Eggs
  • 1/4 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Chocolate Chips semisweet
  • 1/2 cup Peppermint Bark chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large bowl,mix together flour, cocoa powder, baking soda, baking powder, and salt. Whisk together and set aside.
  • In the bowl of a stand mixer, cream together butter, sugar, and brown sugar.
  • Add in one egg at a time, waiting until each egg has been fully incorporated.
  • After the eggs have been added in, add in the milk.
  • Then, slowly add in the dry ingredients.
  • Add in chopped peppermint bark and chocolate chips, stir together.
  • Using a small cookie scoop, place dollops of the batter onto a parchment paper-lined baking sheet about two inches apart.
  • Bake in the oven for about 10-12 minutes, or until a toothpick inserted comes out clean.
  • Enjoy!

Notes

I used a store-bought peppermint bark, but you can definitely make your own!
This recipe uses semisweet chocolate chips because there's a ton of sweetness in these cookies! You could also use dark chocolate if you wanted!
