Lemon Cheese Danish

Flakey puff pastry is such a delicious pairing with the cream cheese filling, it's almost like having cheesecake in a slice of puff pastry!

Ingredients
  

  • 8 ounces Cream Cheese room temperature
  • 1 teaspoon Lemon Extract
  • 1/2 teaspoon Vanilla Extract
  • 2 Lemons zested
  • 3 tablespoons Sugar
  • 1 tablespoon Heavy Cream
  • 2 Eggs
  • 1 Package Puff Pastry
  • Blueberry Jam

Lemon Drizzle (optional):

  • 1 cup Powdered Sugar
  • 1 tablespoon Milk
  • 1/2 teaspoon Lemon Extract

Instructions
 

  • Preheat oven to 400 degrees.
  • Let puff pastry sit at room temperature for about 30 minutes.
  • Combine cream cheese, lemon extract, lemon zest, sugar, heavy cream, vanilla and one egg yolk. Whip together until nice and fluffy.
  • Roll out the puff pastry to roll out any seams in the dough. Cut into 6 even pieces.
  • Scoop a dollop of the cream cheese mixture into the middle of the pastry pieces. Then spread it out leaving a quarter inch border around the edges.
  • Add a dollop of jam and stir around.
  • Create an egg wash by mixing together one egg with a splash of water. Brush onto the edges of the puff pastry. Sprinkle with a little extra sugar.
  • Bake for about 15-18 minutes.

Lemon Drizzle:

  • Combine powdered sugar, lemon extract, and milk. Stir together.
  • Drizzle over cooled pastries.
  • Enjoy!
