Chai Coffee Cake

A soft, delicate chai spiced coffee cake with a sweet crumble topping and delicious chai glaze!

Ingredients
  

  • 1/2 cup Oil
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 1/2 cup Sour Cream
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 1/4 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 2 teaspoons Chai Spice
  • 1/4 cup Milk
  • 2 Chai Tea Bags

Crumble Topping:

  • 1 1/2 cup Flour
  • 3/4 cup Brown Sugar
  • 1/2 cup Sugar
  • 1 teaspoon Chai Spice
  • 1 stick Butter melted

Chai Glaze:

  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla
  • 2 tablespoons Heavy Cream

Chai Spice:

  • 3 tablespoons Cinnamon
  • 1 1/2 tablespoons Ground Ginger
  • 1 tablespoon Cardamom
  • 1 teaspoon Ground Cloves
  • 1 teaspoon Nutmeg
  • 1/4 teaspoon Black Pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Add milk to saucepan on the stovetop over medium-low heat, add in tea bags. Allow to steep for 10 minutes while you prepare the rest of the batter!
    1/4 cup Milk, 2 Chai Tea Bags
  • Add oil, sugar, and brown sugar to a bowl. Mix together.
    1/2 cup Oil, 1/2 cup Sugar, 1/2 cup Brown Sugar
  • Crack in two eggs, sour cream, and vanilla. Whisk together.
    2 Eggs, 1/2 cup Sour Cream, 1 teaspoon Vanilla
  • Remove tea bags from milk, squeezing gently to get excess milk and flavor out! Pour milk into wet ingredients. Stir together.
  • To the wet ingredients, add in flour, baking soda, baking powder, and chai spice. Stir together and set aside.
    2 cups Flour, 1/4 teaspoon Baking Soda, 1 teaspoon Baking Powder, 2 teaspoons Chai Spice
  • In a separate bowl, add flour, brown sugar, sugar, chai spice, and melted butter. Stir together.
    1 1/2 cup Flour, 3/4 cup Brown Sugar, 1/2 cup Sugar, 1 teaspoon Chai Spice, 1 stick Butter
  • Pour in half the batter to a parchment lined baking dish. Sprinkle in half the crumble mixture. Then add the remaining batter to the top, followed with the rest of the crumble mixture.
  • Bake in a preheated oven for 45-50 minutes, or until a toothpick inserted comes out clean!
  • While the cake cools, make the glaze by combining powdered sugar, vanilla, and heavy cream.
    1 cup Powdered Sugar, 1 teaspoon Vanilla, 2 tablespoons Heavy Cream
  • Drizzle glaze over cake and enjoy!

To Make Chai Spice:

  • Add cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper to a bowl. Stir to combine.
    3 tablespoons Cinnamon, 1 1/2 tablespoons Ground Ginger, 1 tablespoon Cardamom, 1 teaspoon Ground Cloves, 1 teaspoon Nutmeg, 1/4 teaspoon Black Pepper
