Strawberry Crumble Cookies

These Strawberry Crumble Cookies are the perfect springtime dessert combining a strawberry muffin and sweet chewy cookie into one!

Ingredients

  • 1 stick Butter
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar packed
  • 1 Egg
  • 2 teaspoons Vanilla
  • 1/4 teaspoon Almond Extract
  • 1 3/4 cups Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 cup Strawberry Jam

Crumble topping:

  • 3 tablespoons Butter room temperature
  • 1/2 cup Flour
  • 3 tablespoons Sugar
  • 1 tablespoon Brown Sugar
  • 1/8 teaspoon Salt
  • 1/2 teaspoon Vanilla

Instructions

  • Preheat the oven to 350 degrees.
  • Cream together butter, brown sugar and sugar.
    1 stick Butter, 1/2 cup Sugar, 1/2 cup Brown Sugar packed
  • After the sugar has been fully incorporated, add in the egg, vanilla extract, and almond extract.
    1 Egg, 2 teaspoons Vanilla, 1/4 teaspoon Almond Extract
  • Then add in flour, baking powder, and salt.
    1 3/4 cups Flour, 1/2 teaspoon Baking Powder, 1/4 teaspoon Salt
  • Then add in dollops of the strawberry jam and swirl through the batter.
    1/4 cup Strawberry Jam
  • In a separate bowl combine crumble ingredients: butter, brown sugar, sugar, vanilla, flour, and salt. Stir together.
    3 tablespoons Butter, 1/2 cup Flour, 3 tablespoons Sugar, 1 tablespoon Brown Sugar, 1/8 teaspoon Salt, 1/2 teaspoon Vanilla
  • Using a small cookie scoop, scoop out the dough, gently press down slightly.
  • Top with a sprinkle of the crumble topping.
  • Place on a baking sheet and bake for about 15 minutes
  • Let cool and enjoy!
