These homemade Strawberry Rice Krispie treats are perfect for making during a busy weeknight or on a Sunday afternoon for a lunch time dessert during the week! I love that this recipe can be customized to fit whatever you’re craving! With a base of only four ingredients, you can make these into whatever you’re in the mood for! From peanut butter rice krispie treats, to fruity funfetti treats, I’ve made more than my share of delicious rice cereal treats! 

My recommendation? Walk through any of your local grocery stores, take a few minutes in the cereal aisle, and you can create 5 different cereal bars to fit whatever you need! 

Ingredient List:

  • Crispy Rice Cereal. You can use whatever kind of cereal you like best, I’ve made these cereal bars with all kind of cereal and they’re all delicious! For this recipe, I like to use the plain rice cereal since I really want the strawberry flavors to shine! 
  • Mini Marshmallows. I like to use mini marshmallows because I like to reserve about a cup of mini marshmallows to sprinkle in later so there’s chunks of gooey marshmallows in the bars when they’re finished! However, if you only have large marshmallows on hand, they were just fine! 
  • Butter 
  • Vanilla Extract 
  • Chocolate chips. I like to use semi-sweet chocolate chips for this since there’s already a lot of sweetness in these cereal bars already, but you could use milk chocolate, dark chocolate, or even white chocolate chips! 
  • Freeze-Dried Strawberries. I love using freeze-dried fruit in my dessert recipes because there’s no water that could mess up the ratios in my recipe versus if I were to use fresh strawberries that are very juicy! You can use any freeze dried fruits in this recipe, such as raspberries, or blueberries!
  • Coconut Oil. I like to add this to melted chocolate to create a smoother chocolate that has a softer bite to it! you could leave this out if you wanted!

Equipment Needed:

There’s really only a few things you need to make these Chocolate Strawberry Rice Krispie Treats. 

Large Saucepan – Make sure you use a large saucepan for melting the butter and marshmallows together. 

8 inch Square Pan – I like to use a square pan that I lined with parchment paper to make sure that the cereal treats come out easily after they’re all set up! However, you can use a cake pan or a 9×13 inch pan! Just keep in mind that the bigger the pan you use, the thinner the bars will be! I like nice and thick crispy treats, so I use my square pan! 

Microwave Safe Bowl – My preferred method of melting chocolate is in a small bowl in 30-second intervals. I think it’s the easiest and quickest method to getting melted chocolate! 

Plastic Bag – I like to put the freeze dried fruit into a plastic bag and use a heavy object to break them into smaller pieces! I don’t recommend using a food processor for this step because that will turn this into strawberry powder! I like having little chunks of strawberry throughout the bars!

Storage Directions:

Store in an airtight container at room temperature for about 5-6 days! I love making these for a party because a batch makes a ton of delicious treats and they last for days! Perfect for take home gifts, or to snack on during a party! 

Step by Step Instructions:

Step 1. Melt butter and marshmallows (reserving 1 cup of the marshmallows for later) over medium-low heat 

Step 2. Crush freeze-dried strawberries in a plastic bag, then pour into a bowl with rice cereal and extra mini marshmallows. Then pour in melted marshmallow butter mixture. 

Step 3: Pour everything into a prepared pan and press into an even layer. 

Step 4. Pour over melted chocolate and top with a few more freeze dried strawberries.

Helpful Tips and Tricks

Make sure you line your baking pan with parchment paper or wax paper. If you don’t have those, you can use nonstick spray! You want to have either a greased baking dish or a lined baking dish, otherwise it can be really hard to get the bars out of the pan when they’re set!

I like to keep nonstick spray around in case the melted marshmallows start getting too sticky! It helps to spray down your rubber spatula with nonstick spray before trying to stir the mixture! Speaking from experience, I’ve wasted a lot of marshmallow getting stuck to the spatula, the pan, and let’s face it, my hands!

  • Square Pan
  • Large Saucepan
  • Parchment Paper

Ingredients

  • 5 cups Crispy Rice Cereal
  • 4 tablespoons Butter
  • 1 Bag Mini Marshmallows
  • 1 teaspoon Vanilla
  • 1 cup Freeze Dried Strawberries
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 tablespoon Coconut Oil

Instructions

  • Add the butter to a large saucepan with the marshmallows and vanilla. Make sure to leave about a cup of mini marshmallows aside.
    4 tablespoons Butter, 1 Bag Mini Marshmallows, 1 teaspoon Vanilla
  • Stir together until the marshmallows have fully melted.
  • While the marshmallows are melting, add freeze-dried strawberries to a plastic bag. Use a rolling pin to gently crush the strawberries, leaving a few bigger chunks!
    1 cup Freeze Dried Strawberries
  • Once the marshmallows are fully melted, add in the rice cereal.
    5 cups Crispy Rice Cereal
  • When the rice cereal is almost fully mixed in, add in crushed fruit and remaining marshmallows.
  • Stir everything together.
  • Add mixture to a parchment-lined square pan. Press down gently on top to get a nice flat surface.
  • In a microwave safe bowl, add in chocolate chips and coconut oil. Melt in 30-second increments until fully melted. Pour over the top of the rice krispies. Sprinkle freeze dried strawberries on top!
    1 cup Semi-Sweet Chocolate Chips, 1 tablespoon Coconut Oil
  • Let set, then cut into squares and enjoy!
