- 1 Egg + 1 Egg Yolk

Instructions
- Step 1: Combine browned butter, sugar, and brown sugar with vanilla, egg and egg yolk.
- Step 2: Add flour and baking powder to wet ingredients.
- Step 3: Mix chocolate chips in dough.
- Step 4: Add ¾ of the dough to the pan and spread out marshmallow fluff, then dollop on the remaining dough. Bake in a preheated oven for about 35 minutes.
Hint: Make sure to leave the parchment paper slightly longer than the pan so you can easily remove the bars after they're done baking!
Variations
S'mores is definitely my favorite combination with these cookie bars, but the options are endless!
- Chocolate Chip - sometimes plain and simple is the way to go! Leave out the marshmallows and enjoy these chocolate chip cookie bars!
- Peanut Butter - add a few dollops of peanut butter to the top of these to get a delicious peanut butter swirl!
- White Chocolate Raspberry - swap out the dark chocolate for white chocolate and add in freeze-dried raspberries for a fruity spin on these cookie bars!
Equipment
The only thing these easy s'mores bars require in a square pan to bake them in! You can also use a 9x13 rectangular dish, but the bars will be on the thinner side! Using a square pan creates thick and chewy bites!

Storage
Store these S'mores Bars in an airtight container in the pantry for about 5-6 days! If you were going to freeze them, I recommend baking them first, allow to cool completely before wrapping them individually and then storing in an airtight container for about 3 months.
While you can technically freeze these, I don't recommend it with this recipe because the marshmallow fluff can lose its texture and consistency after freezing.

Top tip
To get clean lines when you're cutting these bars, let them cool for about 10-15 minutes before cutting! If you try to cut them while they're still hot, it could turn into some messy slices!

Absolutely! You might have to lower the baking time, since these bars will be slightly thinner than if you use a square pan!
Easy S'mores Cookie Bars

- Parchment Paper
Ingredients
- 1 stick Butter
- ½ cup Sugar
- ½ cup Brown Sugar
- 1 Egg plus 1 Egg Yolk
- 1 teaspoon Vanilla Extract
- 2 cups Flour
- ¾ teaspoon Baking Powder
- 1 cup Dark Chocolate Chips
- ½ cup Marshmallow Fluff
Instructions
- Preheat oven to 350 degrees.
- In a small saucepan, add the butter and begin to brown over medium heat. This will take about 7 minutes. The butter will melt, then begin to bubble. You'll know it's done when the mixture goes quiet and turns a rich amber color. Set aside to cool.1 stick Butter
- In a large bowl, add browned butter, sugar, and brown sugar. Stir together.½ cup Sugar, ½ cup Brown Sugar
- Add in egg and egg yolk, and vanilla.1 Egg plus 1 Egg Yolk, 1 teaspoon Vanilla Extract
- Then mix in flour and baking powder.2 cups Flour, ¾ teaspoon Baking Powder
- Once the mixture is almost combined, stir in chocolate chips.1 cup Dark Chocolate Chips
- In a square dish lined with parchment paper, add about ¾ of the cookie dough.
- Add a generous layer of marshmallow fluff to the top. Then dollop the remaining cookie dough on the top so the marshmallow just peaks through.½ cup Marshmallow Fluff
- Bake for about 35-40 minutes until the top is golden brown.
- Let cool before cutting into bars! Enjoy!

Currently have these in the oven. However, the dough was so crumbly. You have one part where it says 2 eggs and another where it says 1 egg and one egg yolk. I did the latter.

Oh no! I'm sorry that happened! The recipe calls for 1 egg and 1 egg yolk, I went back and updated the section that says 2 eggs. I believe I wrote that so people would know you need to have two eggs at home for this recipe, even if you only use the yolk from one of them! But I updated that to make it more clear for everyone!
