These cookies are inspired by all the warm and cozy coffee drinks that are so popular this time of year! I love walking into a cozy coffee shop and just seeing all the warm, delicious coffee flavors! From pecan praline, to peppermint mocha, they all sound so delicious!

I love the warm flavors of brown butter, toffee, and espresso that just infuse this cookie with flavor! It's a rich and indulgent cookie that will sure to satisfy the sophisticated sweet tooth!

You'll love the rich and nutty flavors of the brown butter that pairs perfectly with the crunchy bits of toffee! Plus, a cookie with a bit of caffeine? Say no more!!

Browned Butter

Browned butter is truly a wonderful ingredient to add to any dessert recipe! Brown butter is the process of browning the milk solids in the butter. As the butter melts, the milk solids separate from the butter and caramelize in the pan. It adds warmth, nuttiness and a hint of caramel flavor to whatever you add it to!

For this recipe, I let the brown butter cool for about 10 minutes, before adding in the espresso powder. The warm butter wakes up the espresso flavor and infuses the butter with rich espresso flavor.

Toffee Cookies

Toffee is such a perfect flavor around the holidays! I love it any time of year, but around the holidays, it feels just a bit more special!

You can find little bits of toffee in the baking aisle of most grocery stores, or online. If you can't find the bits of toffee, you can always use a candy bar with toffee that you chop into small pieces! Or you can make your own homemade toffee, if you're feeling really adventurous!

Ingredients

  • Butter
  • Sugar
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • Flour
  • Baking Powder
  • Espresso Powder
  • Toffee Bits

Step-By-Step Instructions

  1. Step 1: Add espresso powder to the warm brown butter. Then mix in brown sugar and sugar.
  1. Step 2: After mixing in the sugar, add in one egg and vanilla extract.
  1. Step 3: Then add in flour, baking powder, and toffee bits.
  1. Step 4: Scoop out cookie dough and let chill before baking!

Hint: The longer you chill the cookie dough, the less they will spread in the oven! I like to let them chill for thirty minutes!

Variations and Substitutions

These Toffee Coffee Brown Butter Cookies are delicious for dessert, and dare I say, breakfast? Here are some other ways to spice up these cookies!

  • Dark Chocolate - add dark chocolate chips for a chocolatey spin on these cookies!
  • Cinnamon - add some cinnamon or nutmeg to add a spicy warmth to these cookies.
  • Pecans - for some extra crunch, add in chopped pecans to pair with the nutty flavors of the brown butter.

Equipment

Baking Sheet - These cookies do spread in the oven, so in order to give them plenty of space, I like to use a large baking sheet!

Cookie Scoop - For these cookies, I use a 2 ounce cookie scoop to get large cookies! This would be the medium cookie scoop in a set of three!

Top tip

Add the espresso powder to the warm brown butter to help infuse the espresso flavor into the brown butter! It's the perfect flavor combination!

Storage

  • Room Temperature - store in an airtight container for about 3-4 days!
  • Freezer - store cookie dough balls in an airtight container in the freezer for about 3-4 months! Then let thaw in the fridge before baking!

Do I have to use browned butter?

If you're running short on time, you can substitute the brown butter for one stick of room temperature butter!

Where do I find the toffee bits?

These can be found in the baking aisle of your grocery store or online!

Can I use instant coffee powder in place of espresso powder?

Yes! If you can't find espresso powder you can use instant coffee powder!

Equipment

  • Baking Sheet
  • 2 oz Cookie Scoop
  • Parchment Paper

Ingredients
  

  • 10 tablespoons Butter
  • ½ cup Sugar
  • ½ cup Brown Sugar packed
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 ¾ cups Flour
  • ½ teaspoon Baking Powder
  • 2 tablespoons Espresso Powder
  • ½ cup Toffee Bits

Instructions
 

  • Add butter to a saucepan over medium heat. Let the butter melt stirring occasionally, about 5 minutes.
    10 tablespoons Butter
  • Then the butter will begin to foam, stir every 30 seconds. Make sure to break up the foam so you can see the butter changing colors. When the butter is a deep rich amber color, remove from heat and pour into a bowl. Let cool for about 10 minutes.
  • While the butter is still slightly warm, add the espresso powder.
    2 tablespoons Espresso Powder
  • In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.
    ½ cup Sugar, ½ cup Brown Sugar packed
  • Add in one egg and vanilla extract. Mix together.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then, add in flour and baking powder. On a low speed, mix all the dry ingredients to the dough.
    1 ¾ cups Flour, ½ teaspoon Baking Powder
  • Once the dry ingredients are almost mixed in, add in toffee bits. Mix together.
    ½ cup Toffee Bits
  • Let dough chill for 30 minutes.
  • Preheat oven to 350 degrees.
  • Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet.
  • Bake for about 12-14 minutes, the centers will still be slightly gooey.
  • Let cool slightly, and enjoy!
