This Small Batch Vanilla Cake is perfect for those days when you have a small dinner party, book club with the girls, or the day you just need a slice of vanilla cake. Topped with light and airy whipped cream, some sliced strawberries and this vanilla cake is ready for a party!

Small Batch Cake Recipe

If you're craving cake, but don't want to make a three tiered masterpiece, this cake recipe is just for you! Dealing with buttercream, layering cakes, making sure everything is level can be a lot, especially when you really just want a delicious slice of cake.

This recipe is perfect because it comes together all in one bowl and makes the perfect little 8 inch cake round! To make this cake even easier, I like to top it with whipped cream and sliced strawberries. This cake would be perfect for that spring party or the next time you grill out!

The presentation is perfect and you get to enjoy it even more knowing how easy it was to throw together.

Vanilla Cake + A Little Extra

One of my favorite tricks for making vanilla cake pop is my secret ingredient: almond extract.

You don't have to worry about this cake tasting like almond; trust me, the vanilla is going to shine! I like to add the almond extract because it just wakes up the vanilla flavor. Have you ever heard of someone adding coffee to chocolate cakes? It's the same principle. It won't make the cake taste like coffee, but the chocolate flavor intensifies.

Think of the almond extract like a vanilla booster!

If you're worried about it, you can leave it out. But I do feel like it makes a difference, so I recommend you trying it just once!

Ingredients
  

  • ⅓ cup Oil
  • ¾ cup Sugar
  • 2 Eggs
  • 2 tablespoons Greek Yogurt
  • ¼ cup Milk
  • 1 teaspoon Vanilla Extract
  • ⅛ teaspoon Almond Extract
  • 1 ½ cup Flour
  • 2 teaspoons Baking Powder

Whipped Cream Frosting:

  • 1 cup Heavy Whipping Cream
  • ⅔ cup Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2 cups Strawberries sliced
  • ½ tablespoon Sugar

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9-inch cake pan and layer with parchment paper on the bottom.
  • In a large bowl, add sugar, eggs, and oil. Mix everything together until smooth.
    ⅓ cup Oil, ¾ cup Sugar, 2 Eggs
  • Then mix in yogurt, milk, vanilla extract, and almond extract.
    2 tablespoons Greek Yogurt, ¼ cup Milk, 1 teaspoon Vanilla Extract, ⅛ teaspoon Almond Extract
  • After the wet ingredients are fully mixed, add in flour and baking powder.
    1 ½ cup Flour, 2 teaspoons Baking Powder
  • Gently pour in the batter and smooth out the top.
  • Bake for about 30-35 minutes, until a toothpick inserted comes out clean and the top is a nice golden color.
  • Let cool while you make the whipped cream.

Whipped Cream Frosting:

  • Pour heavy cream into a large bowl. Use a mixer to whip the heavy cream to soft peaks*.
    1 cup Heavy Whipping Cream
  • Then pour in powdered sugar and vanilla extract.
    ⅔ cup Powdered Sugar, 1 teaspoon Vanilla Extract
  • Whip until the mixture has formed stiff peaks.
  • Set aside.
  • Slice up strawberries into pieces, depending on the sweetness of strawberries, you could add a tablespoon of sugar.
    2 cups Strawberries, ½ tablespoon Sugar
  • To assemble the cake, add large dollops of whipped cream to the top, then swirl around until it just hits the edge.
  • Then top with strawberries.
  • Serve and enjoy!

Notes

*Soft peaks means if you dip a spoon into the cream and hold up the spoon, the whipped cream will form a mountain peak at the top that will slowly bend over onto itself. Stiff peaks means that when you invert the spoon the mountain peak will stand up and stay standing.
