Spiced Crinkle Cookies

These Spiced Crinkle Cookies are soft, chewy, and full of warm spicy goodness! The best part is that these cookies are a store-bought shortcut, turning a cake mix into the most delicious cookies of the season!

- 1 box Spice Cake Mix** (no pudding added)
- 2 Eggs
- 1/3 cup Flavorless Oil
- 1 teaspoon Vanilla
Sugar Coating:
- 1/2 cup Powdered Sugar
- 1/2 cup Sugar
- 2 teaspoons Pumpkin Pie Spice
Preheat oven to 350 degrees.
In a large bowl, whisk together eggs, oil, and vanilla.
2 Eggs, 1/3 cup Flavorless Oil, 1 teaspoon Vanilla
Then add in cake mix and stir until a dough forms.
1 box Spice Cake Mix**
In one small bowl, mix together sugar and pumpkin pie spice. In a separate small bowl, pour in powdered sugar.
1/2 cup Powdered Sugar, 1/2 cup Sugar, 2 teaspoons Pumpkin Pie Spice
Scoop the dough using a medium cookie scoop, then roll the cookie dough in the pumpkin spice-sugar mixture. Place on cookie sheet.
Scoop out another dough ball and roll in the powdered sugar.
Repeat until half the cookies are coated in powdered sugar and the other half are coated in the pumpkin spice-sugar mixture.
Bake for about 15 minutes, until the cookies are puffed up and the edges are set.
Let cool slightly and enjoy!
**Make sure that your cake mix doesn't say anything about pudding mixes added in! Some cake mixes will add in a pudding mix to the dry ingredients to create a softer cake, so make sure you look at the box! Typically, the box will say something about adding in pudding, so if the box you have doesn't say anything, then it's probably good!
If you bought a box that does have pudding added, you might need to add a bit more flour to get the dough to the right consistency!
