Spiced Crinkle Cookies

These Spiced Crinkle Cookies are soft, chewy, and full of warm spicy goodness! The best part is that these cookies are a store-bought shortcut, turning a cake mix into the most delicious cookies of the season! Quick, delicious, and ready for Santa!

What are Spiced Crinkle Cookies?

Spiced Crinkle Cookies are a soft, cake-like cookie that basically melts in your mouth. Spice cake is one of my favorite cakes because it has all the flavors of fall that I love!

By rolling the cookie dough in sugar, it gives it a crinkle top that makes this cookie perfect for the holidays! Something about a crinkle cookie just screams the holidays to me!

Because I couldn't tell which sugar coating I liked better, I included both in the recipe! Afterall, both is always better, in my opinion!

Cake-Mix Marvels

At any given time, I'm going to have a cake mix in my pantry! Not only is it a great ingredient to have on hand if you need to whip up a cake real quick, but the options for what a cake mix can do are literally endless!

I've turned cake mix into pancakes, cookies, whoopie pies even!

The reason that cake mix can be turned into so many different ingredients is because cake mix is just a combination of flour, sugar, and a leavening agent. It's basically a combination of all the dry ingredients you need for baked goods! By changing out the liquid ratio, you can create whatever dessert you like!

Ingredient List:

  • Spice Cake Mix
  • Eggs
  • Flavorless Oil
  • Vanilla
  • Powdered Sugar
  • Sugar
  • Pumpkin Pie Spice

Not only are these Spiced Crinkle Cookies so delicious, but they make your house smell amazing! The warm spices of cinnamon, nutmeg, and ginger flow throughout the house making everything warm and cozy!

I don't know which coating I like better, pumpkin spice-sugar or powdered sugar!? I guess I'll have to keep taste testing until I figure it out!

Ingredients
  

  • 1 box Spice Cake Mix** (no pudding added)
  • 2 Eggs
  • ⅓ cup Flavorless Oil
  • 1 teaspoon Vanilla

Sugar Coating:

  • ½ cup Powdered Sugar
  • ½ cup Sugar
  • 2 teaspoons Pumpkin Pie Spice

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together eggs, oil, and vanilla.
    2 Eggs, ⅓ cup Flavorless Oil, 1 teaspoon Vanilla
  • Then add in cake mix and stir until a dough forms.
    1 box Spice Cake Mix**
  • In one small bowl, mix together sugar and pumpkin pie spice. In a separate small bowl, pour in powdered sugar.
    ½ cup Powdered Sugar, ½ cup Sugar, 2 teaspoons Pumpkin Pie Spice
  • Scoop the dough using a medium cookie scoop, then roll the cookie dough in the pumpkin spice-sugar mixture. Place on cookie sheet.
  • Scoop out another dough ball and roll in the powdered sugar.
  • Repeat until half the cookies are coated in powdered sugar and the other half are coated in the pumpkin spice-sugar mixture.
  • Bake for about 15 minutes, until the cookies are puffed up and the edges are set.
  • Let cool slightly and enjoy!

Notes

**Make sure that your cake mix doesn't say anything about pudding mixes added in! Some cake mixes will add in a pudding mix to the dry ingredients to create a softer cake, so make sure you look at the box! Typically, the box will say something about adding in pudding, so if the box you have doesn't say anything, then it's probably good!
If you bought a box that does have pudding added, you might need to add a bit more flour to get the dough to the right consistency!
