There’s nothing that can change my mind

INGREDIENTS
1 1/2 cups Flour
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
Pinch Salt
1 stick Butter
1/2 cup Sugar
1/2 cup Brown Sugar packed
1/2 cup Peanut Butter
1 Egg
1 teaspoon Vanilla Extract
12 Large Marshmallows
1/2 cup Chocolate Chips
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS
Preheat the oven to 350 degrees.
Cream together butter and peanut butter.
Then, add in brown sugar and sugar.
After the sugar has been fully incorporated, add in the egg and vanilla extract.
Then add in flour, baking soda, baking powder, and salt.
Once the mixture is almost mixed together, add in chocolate chips
Using a small cookie scoop, scoop out the dough.
Gently press the cookie dough into a flat disc, and press a marshmallow in the middle. Wrap the cookie dough around the marshmallow until just the top of the marshmallow peaks out.
Place on a baking sheet and bake for about 15 minutes
Let cool and sprinkle on a little salt.
Enjoy!

and before you even SAY “aren’t these just chocolate chip cookies without the chocolate chips?!?”

...Maybe, but they’re delicious okay???

INGREDIENTS
9 tablespoons Butter
1/4 cup Sugar
3/4 cup Brown Sugar packed
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1 Egg
1 tablespoon Vanilla
1 3/4 cups Flour
Soft Caramels optional
Toffee Pieces optional
INSTRUCTIONS
Preheat oven to 375 degrees.
Start by browning the butter. Put the butter into a small saucepan on the stove.
Over medium heat, let the butter begin to melt, stirring occasionally for about 7-8 minutes.
Once the butter begins to foam on the top, stir constantly under the butter is a golden brown color about 2 minutes. Pour into another dish and let cool for about 10 minutes.
Then in a large bowl, combine browned butter, white sugar, brown sugar, and vanilla. Stir together.
Whisk in egg.
Next, add in flour, baking soda, and baking powder. If you want to add crushed toffee bits, add them now!
Put the dough in the freezer to chill for 30 minutes.
Scoop out a dollop of cookie dough and place on a cookie sheet.
Then add a few pieces of caramels to the top.
Bake for about 10-12 minutes.
Remove from oven and let cool slightly!
Serve with a glass of milk and enjoy!

What else do you need than a crunchy ice cream cone and gooey caramel?!? 
FULL RECIPE HERE:
Ingredients:
1 box Cake Mix (I used spice cake mix, but chocolate or vanilla would be delicious too!)
12 Joy Cone Ice Cream Cones
1/2 cup Sugar
1 tablespoon Cinnamon 
2 tablespoons Butter
1/2 cup Caramel (store-bought)
1 tub Vanilla Buttercream (store-bought)
Instructions: 
1. Start by making a cake mix following the box directions.
2. Place Joy Cones in a muffin tin.
3. Pour cake batter into the cones until it’s halfway up the cone. Tap the cones slightly so the batter can settle in the cones. 
4. Then bake in a 350-degree preheated oven for about 15 minutes. 
5. While cones cool assemble the cinnamon sugar mixture of 1/2 cup of sugar to 1 tablespoon of cinnamon. 
6. Melt 2 tablespoons of butter in the microwave for thirty seconds. 
7. Add caramel sauce to one piping bag, and frosting of your choice to another piping bag. If you don’t have a piping bag, you can simply use a plastic sandwich bag! 
8. When cones are cool to the touch, brush the top edge in butter, then roll in the cinnamon sugar mixture. 
9. Take a skewer and poke a hole in the cupcake going about halfway down! Place the tip of the caramel piping bag into the cupcake and squeeze until the caramel just pops out of the top!
10. Pipe a dollop of buttercream on top of the cupcake! 
11. Drizzle with extra caramel on top (why not!?).
12. Then enJOY!

INGREDIENTS:
5 cups Crispy Rice Cereal
1 cup Fruity Rice Cereal crushed
4 tablespoons Butter
1 Bag Mini Marshmallows
1 teaspoon Vanilla
1/2 cup White Chocolate Chips
Sprinkles
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS:
Add the butter to a large saucepan with the marshmallows and vanilla.
Stir together until the marshmallows have fully melted.
While the marshmallows are melting, crush up the fruity rice cereal until its into small pieces.
Once the marshmallows are fully melted, add in the rice cereal.
When the rice cereal is almost fully mixed in, add in crushed fruity rice cereal, white chocolate chips, and sprinkles.
Stir everything together.
Add mixture to a parchment-lined square pan. Press down gently on top to get a nice flat surface.
Add a few more sprinkles to the top, then let harden at room temperature for about an hour.
Cut into squares and enjoy!

INGREDIENTS
1/4 cup Oil
1/4 cup Butter melted
1 cup Sugar
1 cup Greek Yogurt
2 Eggs
1 teaspoon Vanilla
2 cups Flour + 2 tablespoons
1/4 teaspoon Salt
1 tablespoon Baking Powder
2 cup Blueberries fresh or frozen
1/4 cup Sugar for sprinkling on top
INSTRUCTIONS
Preheat oven to 425 degrees. Line a cupcake tin with muffin cups, skipping every other one.
In the microwave, melt the butter in 30-second increments until just melted.
Then, pour butter into a large bowl with the oil and stir together.
Add in sugar and mix together.
Then add in Greek yogurt, eggs, and vanilla. Whisk everything together.
Add in flour, baking powder, and salt.
Stir until it’s almost combined.
In a separate bowl, mix together blueberries and 2 tablespoons of flour.
Add blueberries to the batter and gently stir.
Scoop into the muffin tins, top with a few more blueberries, and sprinkle with sugar on the top.
Bake for 20-25 minutes.
Let cool for 10 minutes.
Serve and enjoy!

INGREDIENTS
1/2 cup Oil
1 cup Sugar
2 Eggs
2 tablespoons Lemon Zest
2 tablespoons Lemon Juice
1/2 teaspoon Vanilla Extract
1 1/2 cups Flour
2 teaspoon Baking Powder
1/2 cup Greek Yogurt
Glaze:
1 1/2 cups Powdered Sugar
2 tablespoons Milk
1 tablespoon Lemon Juice
INSTRUCTIONS
Preheat oven to 350 degrees and line 9×5 loaf pan with parchment paper.
Add lemon zest to a bowl with sugar and rub together to extract the oils from the zest.
Add oil to the sugar and stir together.
Mix in eggs, lemon juice, vanilla extract, and Greek yogurt.
Add in flour, baking powder, and salt. Stir until everything is just combined.
Pour batter into lined loaf pan and bake for about 50 minutes, or until a toothpick inserted comes out clean.
Making the Glaze:
While the loaf cools, make the glaze.
Combine powdered sugar, milk, and lemon juice in a bowl. Stir together.
Drizzle the glaze over the loaf cake.
Serve and enjoy!
