These Chickpea Caesar Wraps are delicious all on their own, but here are a few additions to make them even better!
Add Extra Veggies: From red onion to yellow onion, a little pop of onion adds some crunch and extra flavor to these recipe! Or if you wanted to add other types of vegetables, you can add in sliced bell pepper, a pop of sweet shredded carrot, or even some thinly sliced cucumber! There’s really a ton of options for these wraps!
Extra Protein: If you want to increase the protein in these wraps, you can add shredded chicken, sliced buttery avocado, or even other types of beans like black beans to this recipe!
Fresh Herbs: You can add in basil, parsley, or even dill would be delicious in these wraps!
If you wanted, you could make this into Caesar Salad instead of the wraps! So you can add all of this to a bowl and add croutons to the top!

Equipment Needed:
Mixing Bowl – You can use a mixing bowl and whisk to make the dressing! I like to a medium or large bowl to make the dressing and then add the kale to the bowl to mix everything together! You can also use a jar with a lid to shake the dressing together!
Air Fryer – I like to pop the chickpeas into the air fryer to give them extra crunch, but you could also use a baking sheet and pop them into the oven as well!

Step by Step Instructions:

Step 1. In the air fryer, add drained and rinsed chickpeas, with a drizzle of olive oil, Italian seasoning, salt and pepper. Cook for about 20 minutes!

Step 2. In a small mixing bowl, combine tahini, mayo, lemon zest and juice, garlic, Worchestire sauce, salt and pepper. Mix together.

Step 3: Add the dressing over the kale and massage together.

Step 4. Assemble the wrap by adding a little bit of dressing onto the wrap, then adding the kale, chickpeas, and cheese. Wrap everything together and cut in half.
Storage Instructions:
If you are using kale, you can keep the wrap in the fridge for lunch the next day! I don’t recommend making these ahead of time if you use another type of lettuce. Kale is a bit firmer and can hold up to the dressing, while other types of lettuce will get soggy!

Helpful Tips and Tricks
?You can really use any type of cheese in these wraps! If you are going to use a sliced cheese, like provolone or swiss, I recommend putting the cheese of the wrap first, then adding the kale and chickpeas! However, if you want to increase the Caesar Salad-vibes, I would grate parmesan cheese over the chickpeas and kale before wrapping the wrap.
I love the pop of the garlicky Tahini Caesar Dressing, but if you don’t want to use grated garlic in the dressing, you can sub in garlic powder as well! You can also sub in nutritional yeast in your Caesar Dressing if you want!
These Chickpea Caesar Lettuce Wraps with Homemade Tahini Dressing have become a weekly staple in my house! For an easy dinner option or a quick make-ahead lunch idea, it has a little bit of everything all in one bite! The crispy chickpeas pair perfectly with the creamy dressing and wrap!
Cheers!
