Substitutions and Additions:

This Pomegranate Kale salad is the perfect salad for making a side dish or hearty enough to serve as the main course! I have a few options here to make this salad even better (if that’s possible!). 

Protein Options: Feel free to add tofu, eggs, chicken or another protein to the top of this salad! That will make this delicious salad even better! 

Add Fruit: I love the little pops of pomegranate in this salad, so to pair with that, you can add in chopped apples, orange wedges, or even strawberries! Fruit in a salad is such a good combination! 

Types of Cheese: You can also sub out the goat cheese for feta cheese or parmesan as well! 

Salad Dressing: To sub out the apple cider vinegar in the dressing, you can do lemon juice, lime juice, or even pomegranate juice! You just want a pop of acid in the dressing!

Equipment Needed:

Baking Sheet – Use a parchment lined baking sheet to roast all of your vegetables! It’s great for getting the perfect roast on the sweet potatoes! 

Small Jar – I make all of my favorite homemade dressings in a mason jar or a sealable jar! Then you can mix it together easily and store any leftover dressing in the same jar! 

Large Salad Bowl – I like to mix my kale in a large bowl, before adding in the rest of the ingredients! That way you can mix everything and serve it all in the same bowl!

Step by Step Instructions:

Step 1. On a prepared baking sheet, add sweet potato and onion. Drizzle over maple syrup, olive oil, salt and pepper. 

Step 2. Make the dressing by combining olive oil, tahini, maple syrup, apple cider vinegar, garlic, salt and pepper. Shake to combine. 

Step 3: In a large bowl, add kale and pour over a bit of the dressing. Use your hands to massage the kale together.

Step 4. Add the roasted veggies, avocados, pomegranate seeds, cooked orzo, pepitas, and goat cheese!

Helpful Tips and Tricks

To make this recipe even quicker, you can buy pre-chopped vegetables at your local grocery store! This will cut down on prep time! 

Clean hands are a cook’s best friend, so always massage your kale with your hands before serving! It helps soften the kale and reduces some of the bitterness.

Ingredients

  • 2 cups Sweet Potato peeled and chopped
  • 1 cup Yellow Onion chopped
  • 1 tablespoon Olive Oil
  • 2 tablespoons Maple Syrup
  • Salt and Pepper
  • 2 Avocados
  • 1/2 cup Pomegranate Seeds
  • 1 cup Orzo
  • 1/2 cup Pepitas
  • 2 cups Kale
  • Goat Cheese Crumbles

Tahini Maple Dressing:

  • 1/2 cup Olive Oil
  • 3 tablespoons Tahini
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Apple Cider Vinegar
  • 1 Garlic Clove
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 425 degrees.
  • On a parchment paper lined baking sheet, add sweet potatoes and yellow onion.
    2 cups Sweet Potato, 1 cup Yellow Onion
  • Drizzle on olive oil, maple syrup, salt and pepper. Mix together and then bake for 20 minutes!
    1 tablespoon Olive Oil, 2 tablespoons Maple Syrup, Salt and Pepper
  • While the vegetables are roasting, cook orzo according to package directions.
    1 cup Orzo
  • Make the dressing by combining olive oil, tahini, maple syrup, apple cider vinegar, and garlic. Shake the jar to mix everything together, then season with salt and pepper.
    1/2 cup Olive Oil, 3 tablespoons Tahini, 2 tablespoons Maple Syrup, 2 tablespoons Apple Cider Vinegar, 1 Garlic Clove, Salt and Pepper
  • In a bowl, add chopped kale. Pour over some of the dressing and massage with your hands.
    2 cups Kale
  • Then add in roasted vegetables, orzo, pomegranate seeds, pepitas, avocados and goat cheese crumbles.
    2 Avocados, 1/2 cup Pomegranate Seeds, 1/2 cup Pepitas, Goat Cheese Crumbles
  • Pour over the rest of the dressing and enjoy!
