You’ll love how warm and seasonal this Apple Cinnamon Coffee Cake is! It’s the perfect mashup of a delicious apple cake with a streusel coffee cake! With a soft and buttery cake topped with sweet cinnamon apples and a brown sugar oat crumble resting on top of the apples, there’s really nothing missing in this cake! Not to mention, you’re whole house will smell like sweet cinnamon apples!

Types of Apples to Use

This time of year, I always go apple picking, which leaves me with a ton of fresh apples to use! For this recipe, I recommend using whatever your favorite apple type is! When it comes to baking, I prefer using a Fuji or Gala because I like how they hold up against the baking times! 

However, you could also use granny smith apples if you wanted something a little less sweet! It’s also optional to peel the apples! I like to peel the apples for this recipe so they kind of melt into the cake batter a bit easier! It’s delicious either way though!

Substitutions and Additions:

This Spiced Apple Coffee Cake is the perfect mash up of an apple crumble and a cinnamon coffee cake! It’s delicious all by itself but I have a few additions to make this even better!

Add Some Nuts – Feel free to add a little crunch to the crumble topping with some chopped pecans, walnuts or hazelnuts! That would add a nice contrast to the moist cake and soft apples!

Lemon Juice – You can add a squeeze of lemon juice or lemon zest to the apple mixture to help add a bit of acidity to balance out the sweetness!

Vanilla Glaze – You can make a simple vanilla glaze with powdered sugar, heavy cream, and vanilla extract to drizzle on top of the cake after it comes out of the oven! You can even add a few spices like cinnamon or pumpkin spice to really infuse the glaze with the same warm flavors as the cake! This part is optional though! 

Add Extra Fall Flavor – To really punch up the fall flavor you can add in a swirl of apple butter or pumpkin butter! That would add a bit of sweetness and a huge depth of flavor! You could also add in a splash of maple extract with the vanilla which would pair so perfectly the streusel topping!

Equipment Needed:

Large Mixing Bowls – This recipe does require a few bowls to make the cake batter, the crumble, and the cinnamon apples! I like to use a set of glass mixing bowls so I can use the large bowl for the batter, the medium bowl for the crumble and a small bowl for the apples! I use my mixing bowls basically every day!

Cake Pan – For this cake recipe, I like to use a 9-inch round cake pan! However, you can use a springform pan to make it easier to remove or even a square pan if you want this to have more of a coffee cake vibe! Just know that the different sized pans might require additional baking time!

Spatula – Because this cake batter uses oil, I just prefer to mix everything using a rubber spatula! Of course you could also use a hand mixer or an electric mixer to speed up the process!

Parchment Paper – I use a mixture of parchment paper and nonstick spray to make sure that the cake comes out easily from the pan! I spray the pan with nonstick spray, using a pastry brush to brush up the sides of the pan. Then I cut the parchment paper into a circle and place it on the bottom! This helps prevent the cake from sticking and helps it come out easily from teh pan!

Ingredient List:

  • Flavorless Oil – I used vegetable oil, but you can use coconut oil or another type of flavorless oil!
  • White Sugar
  • Large Eggs
  • Milk – I used oat milk for this recipe, so you can use whatever milk or milk alternative you have at home!
  • Vanilla Extract
  • All Purpose Flour
  • Baking Powder
  • Cinnamon
  • Pumpkin Pie Spice
  • Apples
  • Oats
  • Brown Sugar

Step by Step Instructions:

Step 1. In a large bowl, mix together oil, sugar, eggs, milk and vanilla extract. After all wet ingredients are fully mixed, add in the dry ingredients. 

Step 2. Pour the cake batter into a greased cake pan and smooth out the top. 

Step 3: Add the apple mixture to the top of the cake batter.

Step 4. Then generously top the apples with the brown sugar oat crumb topping. Bake in a preheated oven until golden brown on the top and a toothpick inserted comes out clean! 

Storage Instructions:

I recommend storing any leftover slices of the Apple Crumble Cake in an airtight container at room temperature for about 3-4 days! If you made the cake ahead of time, I would make sure to wrap the cake fully with plastic wrap to prevent any part of it from drying out!

You can top this Spiced Apple Cake with really any topping of your choice, from powdered sugar, to a scoop of vanilla ice cream, to a drizzle of caramel sauce, there’s really a ton of options! I prefer a little sprinkle of powdered sugar so I can enjoy a slice with a hot cup of coffee in the morning!

Ingredients

  • 1/3 cup Oil
  • 3/4 cup Sugar
  • 2 Eggs
  • 5 tablespoons Milk
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cup Flour
  • 1 teaspoon Pumpkin Pie Spice
  • 2 teaspoons Baking Powder

Apple Mixture:

  • 2 Apples diced
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Pumpkin Pie Spiced

Crumble Topping:

  • 3 tablespoons Butter softened
  • 1/3 cup Flour
  • 1/4 cup Oats
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Sugar
  • 1/2 teaspoon Vanilla
  • 1/2 teaspoon Cinnamon

Instructions

  • Preheat oven to 350 degrees. Grease a 9-inch cake pan and layer with parchment paper on the bottom.
  • In a bowl, add sugar, eggs and oil. Mix everything together until smooth.
    1/3 cup Oil, 3/4 cup Sugar, 2 Eggs
  • Then mix in milk and vanilla extract.
    5 tablespoons Milk, 1 teaspoon Vanilla Extract
  • After the wet ingredients are fully mixed, add in flour, pumpkin pie spice, and baking powder.
    1 1/2 cup Flour, 1 teaspoon Pumpkin Pie Spice, 2 teaspoons Baking Powder
  • Gently pour in the batter and smooth out the top. Set aside.
  • In a small bowl, mix together diced apples, cinnamon, and pumpkin spice.
    2 Apples, 1/2 teaspoon Cinnamon, 1 teaspoon Pumpkin Pie Spiced
  • Add apples to the top of the cake.
  • Crumble Topping:
  • In a bowl, combine butter, sugar, brown sugar, vanilla, cinnamon, oats and flour. Stir together.
    3 tablespoons Butter softened, 1/3 cup Flour, 1/4 cup Oats, 2 tablespoons Brown Sugar, 2 tablespoons Sugar, 1/2 teaspoon Vanilla, 1/2 teaspoon Cinnamon
  • Add the crumble to the top of the apples.
  • Then place the cake into the oven, bake for about 35-45 minutes!
  • Sprinkle with powdered sugar and enjoy!
