What are Dark Chocolate Pistachio Shortbread Cookie?
Shortbread cookies are a soft, buttery cookie made with four ingredients: butter, flour, sugar, and vanilla. You might notice that these cookies are lacking a few things like leavening agents and eggs! Because of this, they have a super soft texture and you can really taste the buttery flavor. They also don't spread out when they're baking, so I like to roll my shortbread dough into a log and cut slices of cookies!
Because this is a very simple cookie, I love to add in fun mix-ins! The dark chocolate and pistachio combo is a classic sweet and savory vibe with the salty, crunchy pistachios and the sweet, melty chocolate! These cookies are a classic recipe that pairs perfectly with tea time!

Flavor Combinations
These Dark Chocolate Pistachio Shortbread Cookies are an amazing sweet and salty combination! Shortbread cookies are typically flavored with vanilla extract so they start off with a very simple cookie base.
You can just leave these as simple vanilla shortbread which is great with tea, coffee, or just a simple delicate cookie after a heavy meal.
Or you could add in a variety of fun mix-ins:
- White Chocolate Cranberry- you could add in white chocolate chips and dried cranberries for a delicious sweet and tart combination
- Maple Pecan - Sub out vanilla extract with maple extract and add in chopped pecans.
- Lemon Poppyseed - Add in lemon extract, lemon zest, and some poppyseeds for a light and bright shortbread cookie!

Tips and Tricks
One tip that I have for working with shortbread is to wrap the dough in plastic wrap first.
I like to place the dough in the center of the plastic wrap and then cover the dough completely with the plastic wrap. I use my hands to shape the dough into a log about 2 inches in diameter. Then I place the cookie dough log into the fridge to chill!
This makes it super easy to just slice off the amount of cookies you need and bake!

Dark Chocolate Pistachio Shortbread
Ingredients
- 2 sticks Butter room temperature
- ¾ cup Sugar
- 2 teaspoons Vanilla
- 2 ¼ cups Flour
- 2 tablespoons Cornstarch
- ½ cup Chopped Pistachios
- ½ cup Chopped Dark Chocolate
Instructions
- In a large bowl, mix together softened butter with sugar using a hand/stand mixer2 sticks Butter, ¾ cup Sugar
- Add in vanilla and mix together.2 teaspoons Vanilla
- Stir together flour and cornstarch.2 ¼ cups Flour, 2 tablespoons Cornstarch
- Chop up chocolate and pistachios and add them to the dough.½ cup Chopped Pistachios, ½ cup Chopped Dark Chocolate
- Once the dough is mixed together, place on a piece of plastic wrap and roll into a log.
- Place in the fridge for an hour to an hour and a half. Overnight is best!
- Preheat oven to 350 degrees.
- Cut about ¼ inch slices of shortbread and place them on a parchment-lined baking sheet.
- Bake for 12-15 minutes.
- Let cool slightly and enjoy!
