One of my favorite ways to start the day is with a warm and flaky almond croissant, but no one wants to deal with making croissants at home which is why this Easy Almond Croissant Pancake Breakfast Recipe is the perfect alternative! It’s everything you love about almond croissants but in an easy to make pancake form! The two best breakfasts combined into one! What a win!

Substitutions and Additions:
These Almond Croissant Pancakes are easy to make and have the perfect almond flavor from the almond flour and almond extract! But here are a few ways to make these pancakes even better (if that’s possible!).
Add Some Chocolate: A few chocolate chips make everything better! Sprinkle in some dark chocolate chips to pair perfectly with the bright almond flavor!
Add Some Fruit: From strawberries to raspberries, I like the pop of bight fruity flavor with the almond!
Extra Almond: Add a swirl of almond butter to the top of these pancakes for all the almond flavor (and maybe some protein!).

Equipment Needed:
Mixing Bowl: I have a set of glass mixing bowls that I use all the time in my kitchen! For this recipe, I use the medium bowl to mix everything together using a whisk! I don’t recommend using a stand mixer or electric mixer for this recipe as that can make the pancakes too tough!
Griddle or Skillet: You can use a pancake griddle or a nonstick skillet to make this recipe! The larger the pan, the more pancakes you’ll be able to make at once!

Step by Step Instructions:

Step 1. In a bowl, combine flour, almond flour, sugar, and baking powder.

Step 2. Then add the wet ingredients into the dry ingredients. Use a whisk to mix until just combined.

Step 3: Add the batter into the pan and cook until bubbles start to form on the top.

Step 4. Add a sprinkle of sliced almonds to the top, then flip to cook on the other side.
Storage Instructions:
Store these pancakes in an airtight container in the fridge for about 3-4 days! If you want to freeze these pancakes, then let them cool completely first. I like to store them with a little square piece of parchment paper into between each pancake so they don’t stick together!

Helpful Tips and Tricks
I like to let this pancake batter set for at least ten minutes! This allows the glutens in the flour to settle and create the best fluffy batter!

Easy Almond Croissant Pancake Breakfast Recipe

Equipment
- Mixing Bowl
- Griddle or Large Skillet
Ingredients
- 1 cup Almond Flour
- 1/2 cup Flour
- 2 1/2 teaspoons Baking Powder
- 2 tablespoons Sugar
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Almond Extract
- 1/2 cup Milk
- 2 Eggs
- 1/4 cup Sliced Almonds
- Powdered Sugar for garnish
- Maple Syrup for garnish
Instructions
- In a bowl, mix together almond flour, flour, baking powder, and sugar.1 cup Almond Flour, 1/2 cup Flour, 2 1/2 teaspoons Baking Powder, 2 tablespoons Sugar
- Then add in egg, milk, vanilla extract, and almond extract.1 teaspoon Vanilla Extract, 1/2 teaspoon Almond Extract, 1/2 cup Milk, 2 Eggs
- Mix until just combined! Then let set for about 10 minutes!
- Warm up a skillet or large pan over medium heat!
- Add a bit of butter to the pan, then add a 1/4 cup of batter to the pan. Let cook for a few minutes on one side until bubbles start to form at the edge.
- Then add a sprinkle of sliced almonds to the top and flip to cook for another few seconds on the other side.1/4 cup Sliced Almonds
