Substitutions and Additions:
I love that these scones have the tender crumb of your favorite scone but almost have the taste of your favorite lemon bars! Not to mention the added crunch of the poppyseeds! Here are a few ways to spice up these scones!
Citrus Flavor: I love the fresh lemons in this recipe with the fresh lemon zest and juice, however really any citrus works well in here! From clementines to grapefruit or even limes could have a fun tropical twist on your morning scone! If you did do limes, I think adding in some coconut would be extra delicious!
Add A Glaze: From adding a simple lemon glaze made of fresh lemon juice and powdered sugar to adding in a drizzle of white chocolate, you can really do a lot with the glaze! Or you can add a generous sprinkle of icing sugar and call it a day! It’s really up to you!
Add Some Fruit: Adding in freeze dried fruit like strawberries, raspberries or even blueberries would be delicious! If you add fresh fruit, be careful that you don’t add too much moisture to the scone dough!

Equipment Needed:
Box Grater – I use a box grater to grate my butter into little pieces and then freeze it! It makes it so much easier to work the butter into the dry ingredients this way!
Sharp Knife – You can use a sharp knife or a bench scraper to help cut the scones into the perfect triangle shape! You can do 8 large triangles or make these mini scones and make 16 little triangles!
Sheet Pan – I like to use a large baking sheet with parchment paper to give these scones plenty of room to bake up in the oven!
Wooden Cutting Board – I like to roll my dough out on a well-floured cutting board! To me, it’s an easier way to contain the flour in case you need to add a little extra to your dough! You can really use any clean surface though! Just make sure to have a little extra flour on hand to prevent the scone dough from sticking to your surface! You can either use your hands to flatten out the dough or a rolling pin!

Step by Step Instructions:

Step 1. Using a box grater, grate the butter into small pieces and place in a small bowl. Place in the freezer while you assemble the other ingredients.

Step 2. In a large bowl, mix together the dry ingredients by combining sugar, lemon zest, flour, baking powder and poppyseeds. Mix everything together.

Step 3: Then add in butter and combine until the butter is pea sized pieces. Pour in the remaining wet ingredients.

Step 4. Mix the dough together with your hands then roll out on a wooden cutting board. Cut the dough into 8 equal triangles and freeze. Right before baking brush on heavy cream, place on a prepared baking sheet, and bake in the oven until the bottoms are slightly golden brown!
Storage Instructions:
I like to store any of the leftover scones in an airtight container at room temperature for about 3-4 days! They can dry out by the third or fourth day, but I like to pop them in the microwave for about 20 seconds and then add a smear of butter and they’re good to go!

Helpful Tips and Tricks
My all-time favorite trick whenever I’m working with citrus is to massage the lemon zest and sugar together first! The sugar absorbs the extra oils of the citrus and infuses the batter with the perfect fresh lemon flavor!
I like to add sugar to the top of my scones for extra crunch, but you could also add extra poppy seeds to the top as well!
If you wanted to make these even easier, you can use either large or medium cookie scoops to scoop out the scone done to get perfect dollops of scone dough!

Easy Homemade Lemon Poppyseed Scone Recipe

Equipment
- Box Grater
- Mixing Bowl
- Baking Sheet
Ingredients
- 1/3 cup Sugar plus more for sprinkling on top
- 1 Lemon zested
- 2 cups Flour
- 2 1/2 teaspoons Baking Powder
- 2 tablespoons Poppyseeds
- 1 stick Butter cold
- 1/4 cup Heavy Cream cold
- 2 tablespoons Lemon Juice
- 2 Eggs cold
- 1 teaspoon Vanilla
- 1 tablespoon Heavy Cream topping
Instructions
- Place butter in the freezer for 10 minutes.1 stick Butter cold
- Mix together sugar and lemon zest.1/3 cup Sugar, 1 Lemon
- Then add in flour, poppyseeds, and baking powder.2 cups Flour, 2 1/2 teaspoons Baking Powder, 2 tablespoons Poppyseeds
- Grate the frozen butter using a box grater. Put butter back in the freezer for another 10 minutes.
- Add in butter and use a pastry cutter or your hands to mix the butter into small pea-sized pieces.
- Combine heavy cream, eggs, lemon juice and vanilla extract.1/4 cup Heavy Cream cold, 2 tablespoons Lemon Juice, 2 Eggs cold, 1 teaspoon Vanilla
- Pour the wet ingredients over the dry butter mixture.
- Pat the dough into a large circle, then cut into 8 even triangle. Almost like cutting a pizza!
- Place the scones in the fridge to chill for 30 minutes.
- Preheat oven to 400 degrees
- Brush the top with heavy cream and add a sprinkle of sugar.1 tablespoon Heavy Cream topping
- Bake for 20-25 minutes!
- Serve and enjoy!
