These Chai Spiced Oat Crumble Muffins are absolutely delicious! I love the combination of teh chia spice and the brown sugar oat crumble! It’s a match made in muffin heaven! Here are a few ways to spice up this recipe!

Add Some Fruit: You can mashed bananas, berries or even apples to this muffin recipe! I kind of like the sound of chai apple muffins! Even adding in unsweetened applesauce would be a great addition to these muffins! 

Nutty Crunch: Add in chopped pecans or walnuts to the crumble for an extra little crunch against the soft texture of the muffins!

Espresso: Make these Dirty Chai Muffins by adding in some espresso powder to the dry ingredients! Now you can get your breakfast and caffeine fix all in one delicious bite!

Equipment Needed:

Muffin Pan – I like to use two different muffin pans when I’m making this recipe, even though it only makes 12 muffins! I like to leave a space in between each muffin while they’re baking to help the air circulate around the muffins better.

Muffin Liners – I always have muffin liners on hand to use for cupcakes or muffins! It’s super easy to pop them into the muffin pan and you’re ready to bake! They even have type of reusable silicone muffin cup that you can buy now too! 

Mixing Bowl – I use a large mixing bowl when it comes to mixing the muffin batter together! You can use a small bowl for the crumble topping! 

Cookie Scoop – To make sure all of my muffins are the same size, I like to use a large cookie scoop! This helps make sure the muffins all cook at the same temperature and none of them get over-baked or burnt! You can use a cookie scoop, ice cream scoop, or a measuring cup!

Ingredient List:

  • Flavorless Oil – I like to use vegetable oil, but you can use melted butter, coconut oil, or another type of flavorless oil for this recipe! 
  • Brown Sugar
  • Sugar
  • Milk
  • eggs
  • Vanilla Extract
  • Flour
  • Oats
  • Baking Powder
  • Baking Soda
  • Cinnamon
  • Ginger
  • Nutmeg
  • Cardamom
  • Allspice
  • Cloves

Step by Step Instructions:

Step 1. In a large bowl, mix together oil, brown sugar, and sugar. Stir together before adding in the eggs, milk, and vanilla extract. 

Step 2. After all the wet ingredients are mixed together, whisk in the dry ingredients. 

Step 3: Scoop the muffin batter into a prepared muffin pan. 

Step 4. Sprinkle on the oat crumble on top of each muffin, then place in the oven to bake!

Storage Instructions:

Store in an airtight container at room temperature for about 3-4 days! 

This is a great recipe to freeze the muffins to make ahead of time! Let the muffins cool completely before wrapping individually in plastic wrap. Place them in a freezer bag and freeze for about 2-3 months. When you’re ready to eat them, you can thaw them in the microwave!

Helpful Tips and Tricks

I like to use old fashioned oats for this streusel topping, but you can add in quick oats or steel-cut oats! Really whatever type of oatmeal you already have in your pantry works great! This is supposed to be an easy recipe made with ingredients you already have! If you wanted to increase the oat flavor and texture in these muffins, you could sub out the flour for oat flour! 

If you don’t have all the spices for the chai spice, you can find a ton of already made chai spices online or even at your local grocery store! It’s a great ingredient to have on hand to warm up any recipe!

Ingredients

  • 1/2 cup Oil
  • 1/2 cup Brown Sugar
  • 1/2 cup Sugar
  • 2 Eggs
  • 1/4 cup Milk
  • 1 teaspoon Vanilla
  • 1 1/2 cups Flour
  • 1 cup Oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Ginger
  • 1/4 teaspoon Nutmeg
  • 1/8 teaspoon Cardamom
  • 1/8 teaspoon Allspice
  • 1/8 teaspoon Cloves

Crumble Topping:

  • 3 tablespoons Butter room temperature
  • 1/3 cup Flour
  • 1/4 cup Oats
  • 1/4 cup Brown Sugar
  • 2 teaspoons Cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, add in oil, brown sugar, and sugar. Stir everything together.
    1/2 cup Oil, 1/2 cup Brown Sugar, 1/2 cup Sugar
  • Add in eggs, milk, and vanilla. Mix together.
    2 Eggs, 1/4 cup Milk, 1 teaspoon Vanilla
  • To the wet ingredients, add in flour, oats, cinnamon, clove, nutmeg, ginger, allspice, cardamom, baking soda, and baking powder. Stir everything together.
    1 teaspoon Baking Powder, 1/2 teaspoon Baking Soda, 1 teaspoon Cinnamon, 1/4 teaspoon Ginger, 1/4 teaspoon Nutmeg, 1/8 teaspoon Cardamom, 1/8 teaspoon Cloves, 1 1/2 cups Flour, 1 cup Oats, 1/8 teaspoon Allspice
  • While the oven is preheating, make the crumble topping.
  • In a bowl, mix together, butter, flour, oats, brown sugar, and cinnamon.
    3 tablespoons Butter, 1/3 cup Flour, 1/4 cup Oats, 1/4 cup Brown Sugar, 2 teaspoons Cinnamon
  • Set streusel aside. Fill up muffin tins using a large cookie scoop. Then top with some streusel.
  • Bake for about 15-20 minutes until a toothpick inserted comes out clean!
  • Let cool slightly, then serve and enjoy!
