Types of Blueberries
For these White Chocolate chip Blueberry Scones, you can really use any three types of blueberries: dried, fresh, or frozen! Here are my tips with each type of blueberry!
Working with dried blueberries is probably the easiest as they don’t add extra moisture to the scone dough, however, you don’t get the bright pops of blueberries!
If you use fresh blueberries, just be gentle when you’re working with the dough so you aren’t squishing the blueberries!
If you decide to use frozen blueberries, I recommend keeping them cold and frozen before adding them to the dough! You don’t want them to thaw too much, as that can add extra moisture into the dough and could cause the scones to crumble!
All will be delicious, it’s really up to what’s available near you!

Substitutions and Additions:

Step by Step Instructions:

Step 1. In a bowl, combine flour, baking powder, and sugar.

Step 2. Then add in grated butter to the flour mixture and work into pea sized pieces.

Step 3: Add in the remaining wet ingredients. Mix together before adding in the blueberries.

Step 4. Form dough into a circle and cut into 8 equal triangles. Then brush with heavy cream, sprinkle on sugar, and bake in the oven for about 15-20 minutes. When the scones have cooled, you can add a drizzle of melted white chocolate.
Storage Instructions:
Store these scones in an airtight container for about 2-3 days at room temperature.

Helpful Tips and Tricks
I prefer to use grated butter since that’s the easiest way to get the butter into pea-sized pieces without warming up the butter too much! If you don’t have a box grater, you can just cut the butter into small squares and use two knives or a pastry cutter to cut the butter into the flour.

Equipment
- Box Grater
- Mixing Bowl
- Baking Sheet
Ingredients
- 2 cups Flour
- 1/3 cup Sugar
- 2 1/2 teaspoons Baking Powder
- 1 stick Butter cold
- 1/4 cup Heavy Cream cold
- 2 Eggs cold
- 1 teaspoon Vanilla
- 1 tablespoon Heavy Cream topping
- 1 1/2 cup White Chocolate Chips
- 1/2 cup Blueberries
Instructions
- Place butter in the freezer for 10 minutes.1 stick Butter cold
- Whisk flour, baking powder, and sugar together.2 cups Flour, 1/3 cup Sugar, 2 1/2 teaspoons Baking Powder
- Grate the frozen butter using a box grater. Put butter back in the freezer for another 10 minutes.
- Add in butter and use a pastry cutter or your hands to mix the butter into small pea-sized pieces.
- Combine heavy cream, eggs, and vanilla extract.1/4 cup Heavy Cream cold, 2 Eggs cold, 1 teaspoon Vanilla
- Pour the wet ingredients over the dry butter mixture.
- Mix everything together, then add in blueberries. You can use your hands to form a rough shaggy dough.1/2 cup Blueberries
- Pat the dough into a large circle, then cut into 8 even triangle. Almost like cutting a pizza!
- Place the scones in the fridge to chill for 30 minutes.
- Preheat oven to 400 degrees
- Brush the top with heavy cream and add a sprinkle of sugar.1 tablespoon Heavy Cream topping
- Bake for 20-25 minutes!
- When the scones have cooled, drizzle on the melted white chocolate!1 1/2 cup White Chocolate Chips
- Serve and enjoy!
