Substitutions and Additions:

These Peanut Butter Cookies are absolutely delicious with all the little bits of candy mixed throughout them, while still having that classic chewy peanut butter cookie texture we all love! Here are few additions to make this recipe even more delicious!

Nut Butter: Use whatever type of nut butter you prefer from peanut butter to almond butter or even sunflower butter, especially if there’s a peanut allergy!

Crunch: From potato chips to pretzels to nuts and more, you can really add whatever you have in your pantry to these cookies! I like the idea of adding a salty crunch to help balance out the sweetness of the cookie and the candy mix ins! 

Chocolate Chips: If you feel like these this single peanut butter cookie doesn’t have enough chocolate, you can add in some chocolate chips to help boost the chocolatey flavor! 

Equipment Needed:

Cookie Scoop – You don’t have to use a cookie scoop with this recipe, since its a single serve dessert recipe! However, you can use a small cookie scoop or a medium cookie scoop to get evenly portioned cookies!

Baking Sheet – I like to use a parchment paper lined baking sheet to bake off these cookie dough balls! 

Small Bowl – I use a small bowl to mix this cookie dough together with a rubber spatula, that way you don’t take up too much space in your dishwasher!

Ingredient List:

  • butter
  • Peanut Butter
  • Light brown sugar
  • Sugar
  • Egg Yolk
  • Vanilla Extract
  • All Purpose Flour
  • Baking Soda
  • Chopped Candy

Step by Step Instructions:

Step 1. In a small bowl, mix together butter, peanut butter sugar, and brown sugar. Then mix in egg yolk and vanilla extract.

Step 2. Add the dry ingredients into the wet ingredients and stir together. 

Step 3: Add most of the chopped candy into the cookie dough. 

Step 4. Scoop onto a parchment lined baking sheet before adding the rest of the candy pieces. Bake until golden brown and enjoy! 

Storage Instructions:

There’s not a lot of leftovers with this recipe, since it only makes two to three cookies! However, if you’ve already filled up on Halloween candy and can only eat one cookie, then store the remaining cookies in an airtight container at room temperature.

Helpful Tips and Tricks

If you’re using an all natural or organic peanut butter, there could be extra oil on top, so be sure to really stir together the peanut butter or nut butter to make sure it doesn’t throw off the recipe! 

Fair warning: You won’t be able to resist these single serve cookies especially fresh from the oven! It’s a perfect dessert for using up leftover candy and making these peanut butter cookies loaded with sweet candy flavor! Your sweet tooth won’t be able to handle all this deliciousness!

  • Baking Sheet
  • Parchment Paper
  • 2 oz Cookie Scoop

Ingredients

  • 2 tablespoons Butter room temperature
  • 2 tablespoons Peanut Butter
  • 2 tablespoons Sugar
  • 1 tablespoon Brown Sugar
  • 1 Egg Yolk
  • 1/4 teaspoon Vanilla Extract
  • 1/3 cup Flour
  • 1/8 teaspoon Baking Soda
  • 1/2 cup Chopped Candy

Instructions

  • Preheat oven to 350 degrees.
  • Add butter, peanut butter, sugar, brown sugar, and mix together.
    2 tablespoons Butter room temperature, 2 tablespoons Peanut Butter, 2 tablespoons Sugar, 1 tablespoon Brown Sugar
  • Add in vanilla extract and egg yolk and mix until everything is combined.
    1 Egg Yolk, 1/4 teaspoon Vanilla Extract
  • Stir in flour and baking soda.
    1/3 cup Flour, 1/8 teaspoon Baking Soda
  • Add in chopped candy pieces.
    1/2 cup Chopped Candy
  • Then scoop and place on a baking sheet. Gently press down into a flatter disk and top with more candy pieces. Bake for about 10-12 minutes.
  • Let cool slightly and enjoy!
