Growing up, Sloppy Joes were one of my favorite dinner meals! As someone who admittedly gets pretty messy eating, I loved the idea of a dinner that I could get messy and it was okay! Basically, I just want a roll of paper towels to be at the dinner table and then I’m ready to dive on in!
These Healthy Sloppy Joes are just as delicious as my childhood recipe, but with a few healthy additions that make me feel good eating it! Not to mention, the leftovers are possibly even better the next day, which makes this a great meal prep recipe!

Types of Meat
For this recipe, you can really experiment with which meat you like best! I like to add ground turkey to really keep this recipe healthy! However, you can also add lean ground beef or even do ground beef and pork mixture! It’s really up to you!
For my vegetarian friends, you can use crumbled up tofu or your favorite impossible meat instead!

Serving Options
I love being able to play around with my dinner options and have multiple ways to serve it! It makes leftovers even more fun if you can switch up the way you serve it! Here are a few of my favorite ways to switch up traditional sloppy joes:
On a bun – obviously serving the homemade sloppy Joe sauce on hamburger buns is a classic! I like to use brioche buns because I love the additional sweetness they add to this recipe! You can also use pretzel buns or a sweet potato bun as well! You can serve it with pasta salad, potato salad, or French fries! If you want to get extra fancy you can add a slice of cheese and some dill pickles to spice up this classic comfort food!
Sweet Potato – I like to use a baked sweet potato and load it up with the sloppy Joe mixture! The sweet potato pairs perfectly with the hearty meat mixture! It’s like a loaded baked potato and sloppy Joe had a baby! What could be better than that!?
Sloppy Joe Bowls – you can add some brown rice, roasted vegetables and add the sloppy joe mixture to the top for an easy meal that’s loaded with veggies!
Nachos – If you wanted to get a little wild on a weeknight, you can bake some sweet potato fries on a sheet pan and then add the sloppy Joe mixture on top! Top with some shredded cheese, sour cream, and some avocado and chopped red onions! It’s a fun way to mix up an easy weeknight meal!

Step by Step Instructions:

Step 1. ?In a large skillet, over medium-high heat, add olive oil, ground turkey, and peppers.

Step 2. Then add in garlic, chili powder, and onion powder to the ground meat mixture.

Step 3: Add in tomato sauce, brown sugar, apple cider vinegar and ketchup.

Step 4. Then pour over the top of each potato! Top with a few bread crumbs or fresh herbs.
Storage Instructions:
If you have any leftovers, store in an airtight container in the fridge for about 2-3 days!
If you want to freeze this mixture, let the meat mixture cool completely before portioning off into freezer bags. Be sure to press out any excess air in the bag, then seal completely. Store In the freezer for about 2 months! When you’re ready to enjoy, let it thaw in the fridge for being heating on medium heat!

Helpful Tips and Tricks
I like to add some toasted croutons or bread crumbs to the top to add a little extra crunch! You don’t have to add this step, I just like the different textures together! You could even toast up some burger buns to really play on the sloppy Joe mixture!
This sloppy joe version is a great recipe to make for a busy weeknight, but of course, you can always use a store-bought mixture if you want to make this recipe even quicker! Just add in some chopped green peppers and fresh garlic to really enhance the flavors!
If you wanted to add some chopped yellow onion or green onions to this recipe, you can add them in when you add the chopped up green pepper!

- Large Saucepan
Ingredients
- 1 pound Ground Turkey or Beef
- 2 tablespoons Olive Oil
- 1 Green Pepper chopped
- 3 Garlic Cloves
- 1/2 teaspoon Chili Powder
- 1 teaspoon Onion Powder
- 1 cup Tomato Sauce
- 2 tablespoons Brown Sugar
- 2 tablespoons Apple Cider Vinegar
- 3 tablespoons Ketchup
- Salt and Pepper to taste
- 4 Baked Sweet Potatoes
- Bread Crumbs Optional
Instructions
- In a medium saucepan, add olive oil, ground turkey and chopped green pepper.1 pound Ground Turkey or Beef, 2 tablespoons Olive Oil, 1 Green Pepper
- Let cook for about the ground turkey is almost fully cooked, about 7-10 minutes.
- Then add in garlic cloves, chili powder, and onion powder. Cook for another minute.3 Garlic Cloves, 1/2 teaspoon Chili Powder, 1 teaspoon Onion Powder
- Pour over tomato sauce, brown sugar, apple cider vinegar, and ketchup.1 cup Tomato Sauce, 2 tablespoons Brown Sugar, 2 tablespoons Apple Cider Vinegar, 3 tablespoons Ketchup
- Bring to a bubble and let the sauce thicken and reduce for about 10 minutes, stirring occasionally.
- Once the mixture has thickened to your desired consistency, remove from heat, season with salt and pepper.Salt and Pepper
- To serve, take a baked sweet potato and cut open. Pour the sloppy joe mixture directly in the middle. Top with a few breadcrumbs for crunch.4 Baked Sweet Potatoes, Bread Crumbs
