Why You’ll Love…

I have recently been trying to work on adding more protein in my daily meals (aren’t we all?!), and working cottage cheese into my meals was becoming a bit of a challenge for me! After thoroughly indulging on a spinach artichoke dip appetizer at a friends house, I knew that I had a perfect mash up in my head! Typically, spinach artichoke dips can be full of cream cheese, sour cream, and mayo! Which while those are all delicious, it’s not exactly low calorie, not to mention, zero protein! This version is loaded with Greek yogurt, cottage cheese, and just a bit of mayo for flavor! It’s great for an appetizer with friends or, my personal favorite, an easy lunchtime meal served with your favorite chips, pita bread or veggies!

Substituting the cream cheese for cottage cheese is a great way to turn this creamy spinach dip into a high-protein snack! I love being able to take a recipe that we all love and with a few tweaks turn into something healthy and delicious! That way we can still enjoy our favorite appetizers without feeling guilty or hungry afterwards!

Fresh or Frozen Spinach

I’ve used frozen spinach in the past, but I do feel like it can be a tricky ingredient to work with because of the extra liquid with the frozen spinach! If you do use frozen spinach, be sure to let the excess liquid drain off! You can either let the spinach thaw in a colander while the water drips off, or you can pat it dry with a paper towel and squeeze out the extra liquid!

However, you can also just use fresh spinach and you don’t have to worry about that! I like using baby spinach and chop it into small pieces, before adding it to the dip!

Substitutions or Additions

I think I like this cottage cheese spinach artichoke dip better than the regular one! Not only do I love having healthy recipes on hand but it’s such a delicious crowd pleaser appetizer! It’s perfect for game day treats, movie night with friends or just a yummy dinner to enjoy with a glass of wine. Here are a few other ways to spice up this recipe:

Spicy – Add a few pinches of red pepper flakes to give this recipe a little kick!

Parmesan Cheese – For an extra salty cheese bite, grate in some parmesan cheese with the cottage cheese! It adds a great salty cheesy flavor to the dip!

Quick and Easy – If you want to make this recipe even easier, you can leave out the scallions and garlic, and just substitute garlic powder and onion powder! It cuts out a few of the steps to make this recipe even easier!

If you’re looking for other healthy dishes, try out this Lemon Chicken Orzo Soup! It’s a light and easy soup perfect for spring!

Equipment Needed:

Glass bowl – since this is a smaller mixture, you can leave the large mixing bowl for another recipe, and grab a small to medium sized bowl! I have linked my favorite set of stacking glass bowls that comes in a bunch of different sizes!

Small Baking Dish – I like to use a square baking dish, but any small baking dish will work as long as it’s oven safe!

Step by Step Instructions:

Step 1. In a glass bowl, combine cottage cheese, Greek yogurt, mayo, dijon mustard and lemon zest.

Step 2. Then add in drained and chopped artichoke hearts.

Step 3: Add in chopped baby spinach.

Step 4. Pour everything into a baking dish and top with cheese and few pinches of black pepper.. Bake in a preheated oven until the cheese is melty.

Storage Instructions:

If there’s any leftover dip, you can store in an airtight container, in the fridge for about 3-4 days! The best part about this recipe is that the leftovers are even better the next day!

If you want to freeze this dip, be sure to bake it in a freezer safe container. Then let it cool completely after baking, before covering completely and storing in the freezer for about 3 months! Then left it thaw in the refrigerator and reheat in the oven!

If you are going to freeze it, I recommend leaving the cheese off of the top! Remelted cheese doesn’t have the same texture!

Helpful Tips and Tricks

Tips and Tricks

I like to put the baking dish on a baking sheet before putting it in the oven! Just in case anything bubbles over, it’s nice to have that bit of protection with the baking sheet! You can even put down a piece of parchment paper on the baking sheet for easy clean up!

I like to use canned artichoke hearts because it’s a great ingredient to keep on hand! When you’re looking for canned artichoke hearts at the store, be sure to stay away from any marinated artichoke hearts as those can add extra salt to the recipe!

This healthy spinach artichoke dip recipe is going to be your new favorite appetizer! Even though it’s made with healthier high protein ingredients, it still has all the flavors and textures of the creamy dip we all know and love! I like to serve this with some crusty bread or tortilla chips and snack on it for lunches! It’s delicious the first day, but it gets even better the next! If you’re looking to expand your cottage cheese recipes, this is the perfect one for you!

Cheers!
