Of course, you can always use a store-bought whipped cream if you’d like, but I truly believe making whipped cream at home adds such a depth of flavor that you don’t get with store-bought options! 

To start off, add the heavy cream to a bowl. With an electric mixer, mix until you get soft peaks! Soft peaks means that if you flip the mixer upside down, the whipped cream will form a little mountain peak that gently falls over on top of itself!

Then add in powdered sugar and vanilla extract! It’s such an easy recipe that you can really flavor however you want! You can add in cinnamon, pumpkin spice, or a splash of bourbon!

Substitutions and Additions:

These Strawberry Shortcake Cornbread Cookies are like a little bite of summer in each cookie! But here are a few other options to really make these cookies shine! 

Honey – you can substitute honey for maple syrup or agave if you would like! 

Fresh Fruit- I love the fresh strawberries with these cookies, however, you could really use whatever berry you like best! Or you could turn these into mini fruit pizzas and add a large variety of fruit to the top!

Hand Mixer – I prefer to use a hand mixer to help this recipe mix together easier! You can use an electric mixer or a stand mixer with the paddle attachment! 

Glass Bowl Set – I like to use a small bowl for the strawberries and a large bowl to mix the cookie dough together! It’s great to have a stacking bowl set that comes in a bunch of different sizes for recipes just like this!

  • Butter – I prefer to use salted butter for this recipe; if you use unsalted butter, be sure to add about 1/4 teaspoon of salt! 
  • brown sugar
  • Honey
  • Egg
  • Vanilla Extract

  • Powdered Sugar

Step by Step Instructions:

Step 1. In a bowl, mix together butter, brown sugar, and honey. 

Step 2. Then add in egg and vanilla extract. 

Step 3: Mix in the dry ingredients. 

Step 4. Scoop on a parchment-lined cookie sheet, before baking until golden brown.

Storage Instructions:

Because of the whipped cream on top of these cookies, I recommend topping them right before you’re going to serve them! If you are going to wait, then place the cornbread cookies in an airtight container and leave at room temperature for about 3-5 days! Then you can add the whipped cream and strawberries right before you serve them!

Helpful Tips and Tricks

If you wanted to leave off the whipped cream, you could also make a honey buttercream or grab a store-bought frosting to add to the top! A cream cheese frosting would pair perfectly with the cornbread cookies and strawberries!

Ingredients

  • 1 stick Butter room temperature
  • 1/2 cup Brown Sugar
  • 2 tablespoons Honey
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cups Flour
  • 1/2 cup Cornmeal
  • 1 teaspoon Baking Powder

Whipped Cream:

  • 1/2 cup Heavy Cream
  • 2 tablespoons Powdered Sugar
  • 1 teaspoon Vanilla Extract

Strawberries:

  • 1 cup Strawberries cut into small pieces
  • 1/2 tablespoon Sugar

Instructions

  • In a small bowl, add strawberries and sugar. Stir together and set aside.
    1 cup Strawberries, 1/2 tablespoon Sugar
  • Preheat oven to 350 degrees.
  • In a bowl, mix butter, brown sugar, and honey together.
    1 stick Butter, 1/2 cup Brown Sugar, 2 tablespoons Honey
  • Then add in egg and vanilla extract. Mix together.
    1 Egg, 1 teaspoon Vanilla Extract
  • Add in flour, cornmeal, and baking powder.
    1 1/4 cups Flour, 1/2 cup Cornmeal, 1 teaspoon Baking Powder
  • Scoop out cookie dough onto a piece of parchment paper.
  • Bake in the oven for about 15 minutes.
  • Let cool slightly, while you make the whipped cream.
  • Add heavy cream to a bowl and whip until soft peaks form, about 5 minutes.
    1/2 cup Heavy Cream
  • Then add in powdered sugar and vanilla extract. Mix together.
    2 tablespoons Powdered Sugar, 1 teaspoon Vanilla Extract
  • To assemble:
  • To a cooled cookie, add a dollop of whipped cream to the top, followed by a few strawberries.
  • Serve and enjoy!
