I love making stuffed cookies because they’re like little presents with surprises inside! They look impressive but are super easy to make! The biggest tip I can give for making stuff cookies is to make sure the filling is frozen; this makes it easier to wrap the cookie dough around the filling!

You’ll love these cookies because they taste like mini cookie brownies with a fun surprise on the inside! The only way to make any chocolate cookie better, is to add a little bit of creamy peanut butter and sweet Nutella to the inside!

Nutella Spread

I love adding Nutella to any chocolate desserts! It adds a nutty sweetness that pairs perfectly with chocolate!

You can find a chocolate hazelnut spread in most grocery stores, near the peanut butter section! You can also make your own and that would be super delicious as well!

Peanut Butter Options

For this recipe, I used a creamy peanut butter, but you can use whatever type of nut butter you like best!

Be careful using organic nut butters, as they tend to have extra oil in them!

  • Butter
  • Sugar
  • Brown Sugar
  • Egg
  • Vanilla
  • Cocoa Powder
  • Flour
  • Baking Powder
  • Nutella
  • Peanut Butter
  • Peanuts

Step-By-Step Instructions

  1. Step 1: Add dollops of peanut butter on top of dollops of Nutella, then freeze.
  1. Step 2: Mix butter, brown sugar, and sugar together, before adding in egg and vanilla.
  1. Step 3: Add in dry ingredients.
  1. Step 4: Scoop out cookie dough.
  1. Step 5: Flatten out cookie dough, then add in a frozen dollops.
  1. Step 6: Wrap cookie dough around the filling, then top with peanuts.

Hint: To help the cookies hold their shape better, you can put the cookie dough in the fridge for about 15 minutes before baking!

Variations and Substitutions

You’re going to love these Peanut Butter Nutella Stuffed Cookies! But I have a few other options to make these delicious!

  • Extra Chocolate – add some chopped chocolate to the top of these cookies to make them extra chocolaty!
  • Flakey Salt – add a little pinch of flakey salt to the top to create even more sweet and salty deliciousness!
  • Hazelnuts – leave out the peanut butter and add chopped hazelnuts to the top for a chocolate hazelnut cookie!

Equipment

Baking Sheet – I like to use a large baking sheet, and give these cookies about 2 inches of space in between so they can rise in the oven!

Parchment Paper – I love using parchment paper when I’m baking cookies for easy clean up afterwards!

Cookie Scoop – I use a medium 2 ounce cookie scoop! You want to make sure you have plenty of cookie dough, so you can flatten it out and have enough to wrap around the filling!

Top tip

The longer you freeze the Nutella-peanut butter discs, the easier it will be to put inside the cookie dough!

Storage

  • Room Temperature – store in an airtight container for about 4-5 days!
  • Freezer – scoop cookie dough into balls, then store in an airtight freezer bag for about 3-4 months!

Can I leave out the peanut butter altogether?

Ingredients

  • 1 stick Butter room temperature
  • 1/4 cup Sugar
  • 3/4 cup Brown Sugar packed
  • 1 Egg
  • 1 teaspoon Vanilla
  • 1/2 cup Cocoa Powder
  • 1 1/4 cup Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 cup Nutella
  • 1/2 cup Peanut Butter
  • 1/4 cup Peanuts chopped

Instructions

  • On a piece of parchment paper, place little dollops of Nutella. Then dollop on peanut butter on top. Place in the freezer for 30 minutes.
    1/2 cup Nutella, 1/2 cup Peanut Butter
  • Preheat oven to 350 degrees.
  • In a bowl, cream together butter, sugar, and brown sugar.
    1 stick Butter, 1/4 cup Sugar, 3/4 cup Brown Sugar packed
  • Then mix in egg and vanilla.
    1 Egg, 1 teaspoon Vanilla
  • Add in cocoa powder, flour, and baking powder. Mix everything together.
    1/2 cup Cocoa Powder, 1 1/4 cup Flour, 1/2 teaspoon Baking Powder
  • Then scoop out a ball of cookie dough and flatten in your hand. Add one piece of the Nutella peanut butter bark in the middle. Then wrap the cookie dough around it.
  • Place on a baking sheet and top with chopped peanuts.
    1/4 cup Peanuts
  • Bake for about 15 minutes.
  • Let cool slightly and enjoy!
