Additions and Substitutions
I love these chewy peanut butter cookies so much! But here are few ways you can tweak this recipe to make it even more delicious!
Chocolate and Peanut Butter – Add in some chocolate chips to make this into a peanut butter chocolate chip cookie! Sounds delicious to me!
Add Some Crunch – I like to use creamy peanut butter for this recipe, but you can add in some chopped peanuts to the cookie dough to add a bit of crunch to this recipe!
Peanut Butter Alternatives – If you have a peanut allergy, be sure to use another nut butter option like almond butter or another option you like best!
Please note if you are using natural peanut butter it can sometimes have more oil than other types of peanut butter! You might need to add an extra tablespoon or so of flour for this recipe!

Glass Bowl – Good for mixing everything together! I like to use a small mixing bowl with this recipe since there’s not a lot of ingredients!
Rubber Spatula – I like to mix this cookie dough by hand since it’s such a small amount of ingredients and I don’t like doing dishes! But if you want, you can use a hand mixer or a stand mixer with the paddle attachment!
Baking Sheet – I have a set of three different baking sheets and I like to use a small baking tray since it’s a mini recipe!
Parchment Paper – A must have for easy clean up when making cookies!

Step by Step Instructions:

Step 1. In a small bowl, add butter, peanut butter, sugar and brown sugar together. Mix together.

Step 2. Then add in egg yolk and vanilla extract.

Step 3: Whisk in the dry ingredients to the wet ingredients.

Step 4. Roll the cookie dough balls into the remaining sugar. Place on a prepared baking sheet and gently flatten. Bake until golden brown.
Storage Instructions:
If there’s any leftover cookies, you can store them in an airtight container at room temperature! OR if you want to freeze the other cookie, scoop out the cookie dough balls and place one in the freezer! When its frozen, add it to a freezer bag and save for abbot 2-3 months in the freezer!

Helpful Tips and Tricks
I like to gently pat the cookies down to flatten them before baking! If you want to make these into more traditional peanut butter cookies, you can use a fork to make that classic criss-cross pattern on the top of the cookies!

- Parchment Paper
- 2 oz Cookie Scoop
Ingredients
- 2 tablespoons Butter room temperature
- 2 tablespoons Peanut Butter
- 4 tablespoons Sugar 2 tablespoons, set aside
- 1 tablespoon Brown Sugar
- 1 Egg Yolk
- 1/4 teaspoon Vanilla Extract
- 1/3 cup Flour
- 1/8 teaspoon Baking Soda
Instructions
- Preheat oven to 350 degrees.
- Add butter, peanut butter, 2 tablespoons sugar, brown sugar, and mix together.2 tablespoons Butter room temperature, 2 tablespoons Peanut Butter, 4 tablespoons Sugar, 1 tablespoon Brown Sugar
- Add in vanilla extract and egg yolk and mix until everything is combined.1/4 teaspoon Vanilla Extract, 1 Egg Yolk
- Stir in flour and baking soda.1/3 cup Flour, 1/8 teaspoon Baking Soda
- Scoop into a ball and roll in the remaining two tablespoons of sugar.
- Place on a baking sheet and gently press down into a flatter disk. Bake for about 10-12 minutes.
- Let cool slightly and enjoy!
