No Bake Chocolate Peanut Butter Cookies are basically an oatmeal cookie without any flour! They get mixed together using peanut butter and cocoa powder! It’s a great recipe if you wanted to make these for vegan or vegetarian friends, depending on the type of vegan butter you use!
It’s one of those easy recipes that comes together all in one pan and you don’t need to worry about mixing bowls and baking time! Trust me when I say these No Bake Peanut Butter Oatmeal Cookies will be your new favorite cookies to make around the holidays!

Substitutions and Additions:
I love how easy these Small Batch Cookie recipes are to make, especially this one that comes together all in one pan! But I have a few options for how to make these cookies even better!
Types of Nut Butter: For this recipe, I used regular ole’ peanut butter, but you can use any of your favorite nut butter swaps from almond butter to cashew butter or even sunflower seed butter! Just use whatever you would typically use in place of peanut butter! It’s a perfect treat to customize for those with a peanut allergy! Just a heads up, some natural peanut butter can have a bit more oil on the top so be sure to really mix it together before scooping out, as this can throw off the recipe ratios!
Milk Options: I used oat milk since that’s always what’s in my fridge, plus I love the creaminess of it! But again, just use whatever milk you have, whether that’s almond milk or regular cow milk!
Mix-ins: I love adding some mix-ins to these cookies! It can be mini chocolate chips, some crushed up peanut butter, or even some mini marshmallows! Because these are a really simple cookie recipe, you can add really whatever you want to them! To make these really festive, you can add some sprinkles on top!
Equipment Needed:
Saucepan – No need for bowls and mixers with this recipe! It all comes together in a small, nonstick saucepan! Perfect for busy weeknight days when you just need something sweet!
Cookie Scoop – Depending on how big you want your cookies, you can use either a small or medium cookie scoop! Or if you want, you can just use a regular spoon to dollop the cookie dough onto parchment paper!
Parchment Paper – I like to use either parchment paper or wax paper to let the cookies set! While you don’t have to worry about cook time with these cookies, they do need about 20-30 minutes to firm up! This helps make sure that they don’t stick to the plate after they’ve firmed up!

Step by Step Instructions:

Step 1. In a saucepan, add butter, sugar, milk, and cocoa powder. Stir everything together then put on the stove over medium heat until fully melted.

Step 2. Then let the mixture bubble for about a minute.

Step 3: Remove from heat and stir in peanut butter, vanilla extract, and oats.

Step 4. Scoop onto a parchment lined baking sheet and let cool for about 30 minutes.
Storage Instructions:
Store these cookies in an airtight container at room temperature for about 3-4 days, or however long they’ll last in your household! They only made it one night in mine!

Helpful Tips and Tricks
I like to store them on a parchment lined baking sheet while they’re cooling just in case I need to move where they are! You can just use a piece of parchment paper or even put a piece of wax paper over a plate as well!
For this recipe, I recommend using old-fashioned oats becuase I like the texture that they give these cookies compared to quick cooking oats!

- 4 tablespoons Sugar
