This recipe is inspired by my love of puff pastry! It’s a perfect ingredient to keep in your freezer and pull out for delicious breakfast recipes, quick appetizer ideas, and even adding an extra flair to dinner recipes! Adding a creamy brie cheese and sweet strawberries makes this appetizer perfect for a girl’s night in! The first time I made this recipe, I knew this was going to be one of my favorite appetizers! It’s the perfect combination of all my favorite bites of a charcuterie board wrapped into flaky puff pastry!

Puff Pastry

Puff pastry is a type of dough made through a process of layering butter into the dough! When it bakes, it creates beautiful layers of flakey dough that are golden brown and crispy when they’re done baking! It’s kind of like a mixture of pie dough and croissant dough! Doesn’t that sound delicious?

When you work with puff pastry there’s a few tricks you need to know!

  • Let the puff pastry thaw out at room temperature for about 30 minutes before you use it! You want the dough to be soft enough to roll it out and work with, but you don’t want it to be too warm. Because there’s a large amount of butter in the puff pastry dough, you want the dough to still be firm so the butter can melt down when it’s baking and create those classic flakey layers!
  • In order to get those beautiful golden edges, I like to use an egg wash to brush on the top of my puff pastry before baking! After adding the brie cheese and strawberry to the top, I do a quick egg wash over the top! An egg wash is just a simple mixture of egg and water but it helps the puff pastry turn a beautiful golden color!
  • I’ve often seen people substitute crescent roll dough for puff pastry. Often times, crescent roll dough is easier to find and slightly cheaper than puff pastry! If you can’t find puff pastry, you can use crescent roll dough, but please note there will be a few differences. First, you might have to adjust the cooking time; second, the texture will be slightly doughier than the crispy puff pastry!

Brie Cheese

Brie cheese, fruit, and puff pastry just go together so perfectly! It’s a quick and easy appetizer to throw together, but is a total crowd pleaser! For this recipe, I like to grab a round wheel of brie cheese and I like to leave the white rind on! This is just personal preference, however, I do think keeping the rind on helps the cheese from melting too much in the oven!

If you don’t like brie cheese, you can use any of your favorite cheeses, although I recommend choosing another creamy cheese that will melt down easy, such as camembert!

Fruit Topping

I love the combination of the brie cheese, strawberry and the honey drizzle together! It pairs so perfectly with the crispy puff pastry! For this recipe, I like to use fresh strawberries as well as fig jam! You can use any kind of fresh fruit for this recipe, such as blueberries, blackberries, or raspberries! I don’t recommend using frozen fruit, as they may let off too much moisture!

If you don’t like fig jam, you can also use strawberry jam or another jam that pairs with the fruit you choose to use! I like the combination of the fig jam with brie, but feel free to use whatever fruit jam or jelly is in your fridge!

Once you’ve made this easy recipe once or twice, feel free to experiment with different flavor combinations to see what you like best! You can do a spin on triple berry and use raspberries with blackberry jam, or even add a drizzle of balsamic vinegar to the top to make this feel extra fancy!

          Equipment

This recipe is really easy to throw together and doesn’t require any fancy equipment! I recommend:

          • A large baking sheet to allow plenty of space for the puff pastry to rise in the oven!
          • Parchment paper to help with easy clean up!
          • A pastry brush to brush the egg wash on the top of the puff pastry!

          Top tip

Make sure that you prick the middle of the puff pastry with a fork before adding the jam so it doesn’t puff up too much in the oven!

          Storage

I recommend storing these puff pastry bites in an airtight container in the fridge for about 3-4 days! This Strawberry Brie Honey Pastry is best served hot from the oven, so if you want to make this recipe ahead of time, you can prep the pastries and keep them in the fridge for about a day, before baking in the oven for about 10-15 minutes! Then finish with a drizzle of honey and a pinch of flaky salt!
