You’ll love how light and airy this banana bread! Forget dry and crumbly banana breads when you make this recipe! It’s light, airy, and full of delicious banana flavor! This recipe calls for regular vanilla yogurt! A lot of recipes I’ve made in the past call for Greek Yogurt, but I feel like using regular yogurt adds more moisture to this batter! Adding vanilla yogurt instead of plain yogurt also adds in a bit more flavor! You can do coconut yogurt or even another fruit flavored yogurt would be delicious as well!

Substitutions and Additions:

This Super Soft Banana Bread with Yogurt is one of my favorite ways to start the day! In fact I have one loaf in my freezer right now that is calling my name! Here are a few ways to spice up this recipe! 

Add Some Crunch: I’m not the biggest fan of nuts in my baked goods but don’t let that stop you! You can add in walnuts, pecans, almonds, or even a mixture of a few different nuts and seeds on top! The crunch with the soft banana bread would be absolutely delicious! 

Add Chocolate: Chocolate makes everything better! Adding in some chocolate chips to the batter will add melty bits of delicious chocolate in every bite! I would recommend using semi-sweet or dark chocolate chips so the bread doesn’t get too sweet!

Add Frozen Fruit: You can add in frozen blueberries, raspberries or even some strawberries to really pump up the fruit vibes in this recipe! Just make sure you add them directly to the batter while they’re still frozen, so they don’t add extra moisture to the batter! 

Yogurt Options: I prefer to use vanilla yogurt in this recipe for extra moisture and flavor, but you can also sub in vanilla Greek yogurt, plain Greek yogurt, sour cream, or another type of dairy free yogurt alternative!

Equipment Needed:

Loaf Pan – I would use either a 9×5 or 8×4 loaf pan for this recipe! You could also use a square pan, just know it might affect your baking time! Be sure to use the toothpick test to make sure your banana bread is done!

Large Bowl – For this recipe, I use a large glass mixing bowl to stir together my batter. I don’t like to use an electric mixers with banana bread because I think it make the banana bread too gummy and dense!

Parchment Paper – I like to coat my pan with nonstick spray and parchment paper, just to really make sure my banana bread will pop right out of the pan when I’m ready!

Step by Step Instructions:

Step 1. On a cutting board or plate, mash up the bananas with the pumpkin spice mixture.

Step 2. Then in a mixing bowl, combine melted butter, flavorless oil, sugar, and brown sugar. Mix in eggs, yogurt, vanilla extract, and mashed bananas.

Step 3: Add the remaining dry ingredients into the wet ingredients. Mix everything fully. 

Step 4. Pour batter into parchment lined loaf pan and bake in a preheated oven for about 45 minutes until the bread has risen and is golden brown on the top!

Storage Instructions:

I like to store any remaining banana bread in an airtight container at room temperature for about 3-4 days! Because this banana bread is so moist and airy, it has a great shelf life and can last for awhile without drying out! If you want to freeze the banana bread, I recommend letting it cool completely, then fully wrapping plastic wrap before placing in the freezer for about 2-3 months!

Helpful Tips and Tricks

For best results and extra banana flavor, I recommend using extra ripe bananas that add plenty of sweetness to the batter and make it easy to mash up! 

When it comes to making banana bread, I really like to use this time to relax, unwind and let my thoughts wander while mixing together the batter. I recommend just using a rubber spatula and mixing bowl to mix together your banana bread batter. Using a stand mixer or even a hand mixer can mash up the bananas too much and make the batter a bit gummy! Use this as your moving meditation and enjoy the moment!

Ingredients

  • 2 Bananas
  • 1 teaspoon Pumpkin Spice
  • 1/4 cup Butter melted
  • 1/4 cup Flavorless Oil
  • 3/4 cup Granulated Sugar
  • 1/4 cup packed Light Brown Sugar
  • 2 Eggs
  • 1/4 cup Vanilla Yogurt
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All Purpose Flour
  • 3/4 teaspoon Baking Soda
  • 1 teaspoon Salt

Instructions

  • Preheat oven to 350 degrees.
  • On a plate or cutting board, mash up 2 bananas with the pumpkin spice. I don't like big chunks of bananas in my banana bread so I like to mash it up pretty good!
    2 Bananas, 1 teaspoon Pumpkin Spice
  • In a mixing bowl, combine melted butter, flavorless oil, sugar, and brown sugar. Mix everything together.
    1/4 cup Butter, 1/4 cup Flavorless Oil, 3/4 cup Granulated Sugar, 1/4 cup packed Light Brown Sugar
  • Then add in eggs, mashed bananas, vanilla extract, and yogurt.
    2 Eggs, 1/4 cup Vanilla Yogurt, 1 teaspoon Vanilla Extract
  • Once all the wet ingredients have been fully mixed, add in flour, baking soda, and salt.
    1 1/2 cups All Purpose Flour, 3/4 teaspoon Baking Soda, 1 teaspoon Salt
  • Stir everything together, then pour the batter into a parchment lined loaf pan.
  • Bake in a preheated oven for about 45 minutes, until a toothpick inserted comes out with just a few crumbs!
  • Let cool slightly and enjoy!
Servings: 1 Loaf
