Mint Chocolate Cookies

St. Patrick’s Day is right away around the corner! I am so excited! I always feel like it kicks off some of the spring holidays! Not only is it fun to dress in green and throw a party, but it also a very special day in my household! It is not only my dad’s birthday, but my brother-in-law’s as well! Most of the time, I’m typically making a birthday cake, instead of mint green pies this time of year!

However, this year, I’ve decided to get ahead of the game and plan some St. Patrick’s Day desserts to enjoy now or whenever you get to celebrate!

This one is super easy that works at any time of the year! I have already made a post talking about cake mix cookies and this one is an excellent addition! This version includes a chocolate cake mix with the addition of chocolate cream mints. I have always loved the combination of mint and chocolate, but these cookies are something else! Do you know those chocolate mint cookies that the girl scouts sell every January right after you made your New Year’s resolution? Yeah, those cookies could be these cookies’ sister!

I choose to put the mint chocolates in here because I wanted something that had that bright green color that could go with St. Patrick’s Day, but you could change this up to fit whatever you need to! You could have gone with mint candy-coated chocolates, or you could have any of your other favorite candy bars inside as well! It’s really up to your taste preferences here! I love that you could change the color depending on whatever you need, you could do sports team colors for like a Superbowl party, or you could go with pink or blue for a baby shower! I can’t tell you enough how much I love having a recipe in my arsenal that is so easy and so versatile!


One box of cake mix, I prefer chocolate for this recipe

Half a cup of vegetable oil

2 eggs

1 bag of mint creme chocolate (the bag I found had all the chocolates individually wrapped, it was a slight labor of love to unwrap all them, so they do have pre-chopped chocolates you can get in the baking aisle. I prefer to chop them myself so I can choose how big I want the chunks to be!)

Preheat the oven to 350 degrees. Put the cake mix in a bowl, and add in the oil and eggs. Stir to combine. Unwrap and chop up the creme mints, I liked having slightly bigger chunks, about the size of a dime. I like being able to really taste the creamy mint! Add those into the chocolate mixture and stir to combine. Using a cookie scoop, or a tablespoon measure, scoop the mixture onto a silicone-lined baking sheet. Make sure you leave about two inches between the cookies because they will spread while cooking! Bake for about 15-20 minutes, depending on how big your cookies are!

You can chop these however big you like them! It’s why I prefer chopping my own rather than getting them pre-chopped!

Let cool slightly, and then dig on in! They are so delicious! I love that the edges of the cookies get a little crisp but the inside is still so chewy and soft with the lovely mint flavor flowing throughout. Absolutely divine!
