For the record, I’m sipping on one of these delicious floats as I write this.
When I think of a Rootbeer Float, I am instantly transported to some super cute, retro diner. I’ve never actually been to one, but in my head, I’m picturing sitting on a red leather barstool with checkerboard tiles and every server has those collapsible paper hats on. It’s really quite the picture.
I didn’t have Rootbeer Floats too often as a child, but I do remember them being so much fun! Since I’m making this as an adult (ish), I thought it would be fun to add a little spin on it!
I was intending to buy cinnamon ice cream, but my search came up empty. I did see the flavor butter pecan, which would be a great substitute if you didn’t feel like making your own ice cream!
These floats have the iconic float feel to them! They have the bubbly, foamy bits that rise to the top! The delicious sweetness as the ice cream melts into the drink! Plus, they have that little kick of the alcohol which makes these sweet treats just a little bit naughty!
If you are an apple pie fan, try this drink! Don’t even hesitate, just make it! It’s got everything you know and love about apple pie squeezed into a wonderful alcoholic fizzy drink! There’s the sweet cinnamon, the cool ice cream, and the apple cider swirled throughout!
If you couldn’t tell by now, this drink is my favorite!
1 pint of heavy cream
3/4 tablespoon of cinnamon
1 can of sweetened condensed milk
1 teaspoon of vanilla
A sprinkle of salt
Any hard cider of choice
Pour heavy cream into a bowl. Using a mixer, whip until stiff peaks form! You want the cream to have some shape to it if you dip a spoon into the cream and flip it up. Then, gently fold in the sweetened condensed milk. Add in cinnamon and vanilla. Remember to fold in the ingredients slowly and gently, because you don’t want the heavy cream to deflate. Cover with plastic wrap and then another layer of foil. Place in the freezer overnight!
Place two generous scoops of ice cream into a glass. Pour hard cider over the top!
Serve with a spoon, a straw, or both!
You could also get really fancy with the toppings, like adding whipped cream, caramel sauce, chocolate drizzle, sprinkles, whatever you’re feeling that day!
These are so fun! I used to love rootbeer floats as a child, but this takes it to the next level! I love how warm and cozy the ice cream tastes! Never thought I would say that, but it’s true! The cinnamon is such a beautiful note in the ice cream that pairs perfectly with a hard cider! It’s like apple pie in a delicious, boozy cocktail!
