Chewy Brown Sugar Party Blondies with a Strawberry Frosting

If you’re thinking a blondie is just the boring cousin to a brownie, then you are totally wrong!

I know that a fudgy brownie topped with ice cream and chocolate sauce is quite delectable, that doesn’t really give off summer vibes now, does it!?!

Therefore, it’s time for blondies to get their time in the spotlight!

I added sprinkles because these are party blondies, they need a little pep in their step!

If you’ve never had a blondie before, think of them as a large, thick sugar cookie. They have a similar texture as brownies, but with a sweeter, almost caramel-y note to them. The brown sugar really shines in them, which is probably why I like them so much!


1 3/4 cup of flour

3/4 teaspoon of baking powder

1 teaspoon of salt

2 cups of lightly packed brown sugar

2 sticks of butter, melted

2 teaspoons of vanilla

1/4 teaspoon of almond extract

2 eggs


8 ounces of strawberry cream cheese, room temperature

1 stick of butter

2 cups of powdered sugar

Preheat oven to 350 degrees.

In a small pot on the stove, melt 2 sticks of butter. Set aside to cool slightly

In one bowl, combine flour, baking powder, salt, and brown sugar. Whisk to combine.

When the butter has cooled slightly, combine the eggs and the two extracts with the butter.

Slowly pour the butter mixture into the dry ingredients. Stir until everything is just combined before adding in the sprinkles.

Pour the batter into a parchment-lined square baking dish, I used an 8 x 8 square dish!

Place in the oven to cook for about 30-40 minutes. You want a toothpick inserted to come out clean!

While the blondies cool, time to make the frosting! Add the cream cheese and butter to the bowl of a stand mixer and beat on a medium-high speed until light and fluffy.

Slowly add in powdered sugar one cup at a time.

When the frosting is fully mixed together and the blondies are cooled, place a large dollop of frosting in the center of the blondies.

Using the back of a spoon or an offset spatula, spread the frosting right out to the edges!

I like to make big swoops in my frosting! Then add a few more sprinkles!

Place in the fridge for about 10 minutes for the frosting to harden before cutting!

Aren’t these so fun! I love the pop of the sprinkles in the blondies with the smooth, creamy frosting on top! I think these blondies are ready for their party debut!
