
Yes, I meant to put banana twice in the title! Why?
Because this recipe has double the banana flavor, but also double the deliciousness! Because this Banana Bread has roasted bananas in it!
What?! Roasted Bananas?!
Why do I love roasted bananas for this recipe? There are a few key reasons:
- Using roasted bananas means you don’t have to wait for your bananas to be on the brink of going bad before using them. Say you’re craving banana bread, but just bought practically green bananas at the store? No problem! This recipe is perfect for you!
- Just like with roasting anything, roasting equals caramelization, caramelization equals more depth of flavor, and depth of flavor in bananas equals a very rich, sweet dessert.
If you have bananas that are already a few days old, you don’t have to roast them! This really works best on fresher bananas!
Not only does the roasted bananas add a ton of moisture to this bread, but the brown sugar also brings added moisture and even more depth of flavor. This banana bread is built on delicious layer after delicious flavor, which makes it the superior Banana Bread if I do say so myself…

Ingredients:
4 bananas
1 stick of butter, melted
2/3 cups of packed brown sugar
2 eggs
1 teaspoon of vanilla
2 cups of flour
1 teaspoon of baking soda
1 teaspoon of cinnamon
A pinch of salt
Preheat the oven to 350 degrees.
Place three bananas, peel and all, on a baking sheet and bake for about 15 minutes.
When the bananas are cooled, scoop them out from their peels and mash into a bowl.
Add in melted butter, sugar, vanilla, and cinnamon. Stir everything together.
Add in one egg at a time, until they are fully incorporated.
In a separate bowl, whisk together flour, baking soda, and salt.
Gently, mix the dry ingredients into the banana mixture.
Pour into a greased loaf pan. Cut the final banana in half lengthwise and place on top of the batter with the cut side facing up.
Bake in a preheated oven for about 45-65 minutes, or until a toothpick inserted comes out clean.
Serve fresh from the oven with a little bit of butter, or a little scoop of ice cream, depending on what your mood is!


This banana bread is out-of-this-world delicious! Banana bread has always been very special to me, but this recipe has to be my favorite version ever! And not just because I’m the one that invented it…
