How to Brown Butter

Browning Butter is the process of caramelizing the milk solids of the butter! Even though that sounds pretty fancy, it’s actually a pretty easy process! Just melt the butter down and gently stir it from time to time. The milk solids will be tiny white bits that sink to the bottom of the pan! The butter will begin to bubble as the milk solids caramelize! 

Once the mixture turns into a beautiful golden brown amber color, pour the mixture into a bowl and let it cool! Be sure to scrape all the little brown bits from the pan; that’s extra delicious flavor right there!

Substitutions and Additions:

These Chewy Caramel Coffee Cookies are so delicious all on their own! I have a few substitutions and additions to make these cookies even better!

Chocolate: Feel free to add in some chocolate chips or grab a chocolate bar and it into chocolate chunks to add in the cookie dough! From dark chocolate, to semi-sweet, you can really add any time of chocolate into this recipe! That would be a delicious spin on a classic chocolate chip cookie! 

Peanut Butter: Add in a scoop of peanut butter to help infuse a nutty sweetness into this cookie dough which pairs perfectly with the brown butter! 

Add Some Crunch: You can add in some chopped nuts or even add a salty twist by chopping up some pretzels for these cookies! I love the soft chewy texture of these cookies and adding a crunch would be the perfect pairing!

Equipment Needed:

Medium Saucepan – I like to use a small to medium saucepan to melt the butter down! It helps to use a nonstick pan to help the butter brown! 

Cookie Sheet – I prefer to use a large cookie sheet to give these cookies plenty of room to spread out in the oven! 

Cookie Scoop – For these cookies, I like to use a medium or 2 ounce cookie scoop! I like to make nice, thick cookies. However, you can really use whatever cookie scoop size you have, including an ice cream scoop, just know it can affect the baking time! 

Mixing Bowl – Since the butter is already melted for this recipe, I just use a large mixing bowl and a spatula to mix everything together! Of course, you can always add everything to a bowl of a stand mixer with the paddle attachment or just a electric mixer to mix everything together!

Step by Step Instructions:

Step 1. Add butter to a saucepan and heat over low to medium heat until fully melted and golden brown. 

Step 2. In a large bowl, add browned butter, sugar, and brown sugar. Stir together and add in egg and vanilla extract. 

Step 3: After the wet ingredients are fully mixed together, whisk together the dry ingredients. 

Step 4. Scoop the cookie dough onto a parchment paper lined baking sheet. You can either stuff the soft caramels inside the cookie dough or press the caramel on to the top of the cookie. 

Storage Instructions:

I like to store these cookies in an airtight container at room temperature for about 3-4 days! They hold on to their moisture really well, so they don’t dry out! 

If you are going to freeze this cookie dough, I recommend freezing the cookie dough without the caramels, then letting the cookie dough come to room temperature and adding the caramel when you’re ready to bake them off!

Helpful Tips and Tricks

The best way to serve these cookies is with a tiny bit of flakey sea salt on the top! The crunchy salt helps flour out the sweetness of the caramel! 

When you’re looking for caramel candies at the store, make sure you grab the soft caramels! If you grab the hard caramel candies, they don’t melt down as easily in the cookies and make it very hard to eat later! You can also substitute the caramel with little toffee bits if you’d like! 

The flavor profile of these chewy cookies is so rich and decadent with the nutty flavors of the caramel and the brown butter paired with the rich and bitter flavors of the espresso powder! It’s a perfect combination of sweetness without being overpowering! I love a pinch of flaky salt on top to round out all the flavors! These are the perfect cookie to enjoy on a chilly fall day!

Ingredients

  • 10 tablespoons Butter
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar packed
  • 1 tablespoon Espresso Powder
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups Flour
  • 1/2 teaspoon Baking Powder
  • 12 Soft Caramel Candies

Instructions

  • Add butter to a saucepan over medium heat. Let the butter melt stirring occasionally, about 5 minutes.
    10 tablespoons Butter
  • Then the butter will begin to foam, stir every 30 seconds. Make sure to break up the foam so you can see the butter changing colors. When the butter is a deep rich amber color, remove from heat and pour into a bowl. Let cool for about 5-7 minutes.
  • In a large bowl, mix together butter, sugar, brown sugar, and espresso powder. Mix until everything is smooth and creamy.
    1/2 cup Sugar, 1/2 cup Brown Sugar packed, 1 tablespoon Espresso Powder
  • Add in one egg, and vanilla extract. Mix together.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then, add in flour and baking powder. On a low speed, mix all the dry ingredients to the dough.
    1 1/2 cups Flour, 1/2 teaspoon Baking Powder
  • Let dough chill for 30 minutes.
  • Preheat oven to 350 degrees.
  • Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet. You can either make an indent on the top of the cookies and place a caramel candy on the top, or you can flatten out the cookie dough and place the caramel candy in the center, then fully wrap the cookie dough around the caramel!
    12 Soft Caramel Candies
  • Bake for about 12-14 minutes, the centers will still be slightly gooey.
  • Let cool slightly, and enjoy!
