This has to be the Best Hot Chocolate Marshmallow Cookie Recipe I’ve tried yet! From a chewy chocolate cookie base to a pillow of soft marshmallow and the perfect amount of chocolate on top, this cookie is everything you love about a mug of hot chocolate but maybe even better!

Not to mention, this recipe uses the ultimate store-bought shortcut by using a chocolate cake mix as your cookie base! It creates the ultimate chewy cookies that pairs perfectly with the chewy marshmallow on top of the cookies!
Homemade Marshmallow
I love to make homemade marshmallow for this recipe! Homemade marshmallow is so much softer and fluffier than store-bought marshmallows! Plus, I love that you can pipe it directly on top of the the cookies!
However, after the rush of the holiday season, I know we all need a break! If you want, you can use marshmallow fluff from the store or you can buy large marshmallows and just add those right on top of the cookie dough before baking! Choose whatever option works best for you and your life!

Substitutions and Additions:
These hot chocolate cookies are the perfect cookie combination of a soft and chewy cookie and your favorite cup of hot cocoa! Here are a few additions to make these cookies even better!
Add More Chocolate: If you want, you can add in some chocolate chips to your cookie dough balls before baking! You can add in white chocolate chips, dark chocolate chips, or even a little swirl of chocolate hazelnut spread if you wanted to get really crazy!
Add More Mint: You can add in some peppermint extract to your cookie dough to help infuse these cookies with the perfect minty flavor! Just be careful, peppermint extract is very powerful so you only need a few drops!
Any Extra Flavor: If you have a favorite type of hot cocoa mix you can add a sprinkle of that into your marshmallow base! I like to flavor my marshmallows with pure vanilla extract, but you can add in any extra flavor to this part of the recipe! So if there’s a favorite hot chocolate mix you like, you can add a sprinkle of that here!

Equipment Needed:
Candy Thermometer or Meat Thermometer – The sugar mixture for the marshmallows needs to get to 240 degrees F. So I recommend using some kind of kitchen thermometer for best results!
Baking Sheet – I like to use a large cookie sheet with parchment paper when baking these cookies as they do tend to spread in the oven!
Stand Mixer – While the cookie base is pretty easy to make, I do recommend using a stand mixer or a hand mixer for whipping together the marshmallow! The marshmallow does need to whip together for about 10 minutes until it’s light and fluffy, which is way easier to do with a stand mixer!

Step by Step Instructions:

Step 1. In a medium bowl, mix together cookie dough by combining eggs, oil, and cake mix!

Step 2. Then scoop onto a parchment lined baking sheet to bake!

Step 3: After the cookies are cooled, pipe a large dollop of marshmallow on the top!

Step 4. Dip into melted chocolate and top with mini marshmallow bits and peppermint pieces!
Storage Instructions:
I like to store these cookies in an airtight container at room temperature for about 3-4 days!

Helpful Tips and Tricks
I like to use chocolate melting wafers for this recipe as opposed to chocolate chips because its a bit thinner of consistency which helps when coating the marshmallows! You can find the melting wafers at your local grocery store, right in the baking aisle! You can always use chocolate chips instead, but I would add about 1/2 tablespoon of coconut oil to the chocolate to help it thin out a bit!
I tend to use the soft peppermint bits from the baking aisle, but you can also use crushed up candy canes as well!

Best Hot Chocolate Marshmallow Cookie Recipe

Equipment
- Candy Thermometer
- Stand Mixer
- Baking Sheet
Ingredients
- 1 box Chocolate Cake Mix
- 2 Eggs
- 1/2 cup Flavorless Oil
Marshmallow Topping:
- 2 packets Gelatin
- 3/4 cup Water divided
- 1 cup Sugar
- 1/2 cup Corn Syrup
- 1 teaspoon Vanilla Extract
- 1 cup Chocolate Melting Wafers
Toppings:
- Mini Marshmallow Bits
Instructions
- Preheat oven to 350 degrees.
- Mix together oil and eggs.2 Eggs, 1/2 cup Flavorless Oil
- Add in cake mix and stir together.1 box Chocolate Cake Mix
- Scoop cookie dough onto a parchment-lined baking sheet.
- Bake for about 10-15 minutes.
- Let cool slightly while you make the marshmallow topping!
Marshmallow Topping:
- In the bowl of a stand mixer, add 1/2 cup water, vanilla, and gelatin. Let bloom for ten minutes.2 packets Gelatin, 3/4 cup Water divided, 1 teaspoon Vanilla Extract
- In a saucepan over medium heat, add 1/4 cup water, sugar, and corn syrup. Let dissolve and boil until it reaches a temperature of 240 degrees.3/4 cup Water divided, 1/2 cup Corn Syrup, 1 cup Sugar
- Then slowly drizzle the sugar mixture into the gelatin mixture while the stand mixer is on low
- Then increase the speed of the stand mixer to medium high for about 10-12 minutes, until the marshmallow mixture is light and fluffy.
- Then add the marshmallow mixture to a piping bag and pipe a dollop of marshmallow on top of the cooled cookies.
- Let that set for about 10 minutes while you melt the chocolate wafers in the microwave in thirty second increments.1 cup Chocolate Melting Wafers
- Then dip the top of the cookies into the chocolate wafers.
- Top with mini marshmallow bits.Mini Marshmallow Bits
- Serve and enjoy!
