What are Slice and Bake Cookies?
Slice and Bake Cookies are a thick sugar cookie that is stored in the shape of a log. Instead of using a cookie scoop or rolling out the dough with a rolling pin and using cookie cutters, you just have to cut slices of cookie dough! Once you cut how many cookies you want, you place them on a baking sheet to bake up until they’re perfectly golden brown and soft in the middle! Then you can store the rest of the cookie dough in the fridge until the cookie mood strikes again!
These cookies start out with a simple vanilla dough that you can add any type of mix-in too! I have a few options listed below to give you some ideas! This would be the perfect hostess gift to wrap up and give out around the holidays! It’s just a perfect treat to have on hand because you can cut as many cookies as you like and leave the rest of the dough for later!

Substitutions and Additions:
The best part about these Slice and Bake Cookies is how easily they are to customize! Here are a few of my favorite ways, besides the three listed in the recipe below!
Holiday Spirit: If you need to bump up the holiday spirit you can use gel food coloring to make the dough any type of colored dough you want! I recommend either a red or green for the holiday season! Then roll the cookie dough in a mixture of holiday sprinkles and sugar! Then when you slice each cookie, you get a perfect crispy crust with just the right amount of holiday cheer! You can also do blue and gold for Hanukkah, or make colored dough in your favorite sports team colors!
Nuts: This dough supports any kind of nut and chocolate combination! From dark chocolate pistachio, to hazelnuts and milk chocolate, you can really go crazy with any type of combination! You could even add a drop or two of almond extract to really bump up the nutty flavor!

Equipment Needed:
Hand Mixer: This dough is pretty thick so it holds it’s shape while baking, so I like to use a hand mixer or an electric mixer to really make sure everything is fully combined! You can also use a stand mixer with the paddle attachment as well!
Parchment Paper/Plastic Wrap: I like to use both plastic wrap and parchment paper with this recipe! If you’re going to store the dough for longer than a few hours in the fridge, I recommend wrapping the cookie dough in plastic wrap because I think you get a better seal with it! Then I like to use parchment paper on my baking sheet so the cookies don’t stick to the pan!
Baking Sheet: These cookies don’t spread out too much in the oven, so you can use a smaller cookie sheet with them!

Step by Step Instructions:

Step 1. In a medium bowl, mix together butter, sugar, and brown sugar. Before adding in egg and vanilla extract.

Step 2. Mix the dry ingredients into the wet ingredients.

Step 3: Then add your mix-ins of choice!

Step 4. Shape into a cookie dough log and store in the fridge until ready to bake!
Storage Instructions:
You can wrap the cookie dough log in parchment paper or plastic wrap and freeze fully before placing in a freezer-safe bag for up to three months! Or you could leave the wrapped cookie dough log in the fridge for about 3-4 days before baking! This is a great make-ahead recipe fro the holiday season!
Once you’ve baked the cookies, you can store them in an airtight container at room temperature for about 3 days!

Helpful Tips and Tricks
I like to store the cookie dough in the fridge for at least thirty minutes before cutting into the dough for the first time! This gives the butter some time to firm back up before baking!

Equipment
- Parchment Paper
- Hand Mixer
- Baking Sheet
Ingredients
- 1 stick Butter
- 1/2 cup Sugar
- 1/4 cup Brown Sugar
- 1 Egg
- 1 teaspoon Vanilla Extract
- 2 cups Flour
- 1 tablespoon Cornstarch
Orange Cranberry Cookies:
- 2 teaspoons Orange Zest
- 1/4 cup Cranberries
- 1/4 cup White Chocolate Chips
Peppermint Bark:
- 1/4 cup Dark Chocolate Chips
- 1/4 cup White Chocolate Chips
- 2 tablespoons Peppermint Bits
Dark Chocolate Pistachio:
- 1/4 cup Dark Chocolate Chips
- 1/4 cup Chopped Pistachios
Instructions
- In a large bowl, mix together butter with sugar and brown sugar.1 stick Butter, 1/2 cup Sugar, 1/4 cup Brown Sugar
- Then add in egg and vanilla extract.1 Egg, 1 teaspoon Vanilla Extract
- After all the wet ingredients are mixed together, add in flour and cornstarch. Mix until combined.2 cups Flour, 1 tablespoon Cornstarch
- Depending on which cookies you want to make, this is when you will add in your mix-ins! Stir everything together!2 teaspoons Orange Zest, 1/4 cup Cranberries, 1/4 cup White Chocolate Chips, 1/4 cup Dark Chocolate Chips, 1/4 cup White Chocolate Chips, 2 tablespoons Peppermint Bits, 1/4 cup Dark Chocolate Chips, 1/4 cup Chopped Pistachios
- Add the cookie dough to parchment paper and shape into a log. Wrap with plastic wrap or parchment paper.
- Store in the fridge until you're ready to bake.
- Preheat oven to 350 degrees.
- Slice cookies into half inch slices and place on a parchment lined baking sheet.
- Bake for about 12-14 minutes! Then let cool slightly and enjoy!
